If you grow your own summer squash, or belong to a CSA, the weekly glut of produce can be overwhelming. Our solution? Shred it, squeeze it, mix into a cheesy batter and fritter it away. Literally. 

If you grow your own summer squash, zucchini can sometimes feel like a plot device in a horror sci-fi movie. At the beginning of the season, you carefully harvest the first zucchini, cradle it like an infant and rest it with pride on the cutting board. The next day, you have two more, and with the proud thrill of the backyard farmer, you slice and grill your summer bounty. The next day you have two more, and two more the following day. By the end of the first week of peak zucchini, you’re nervously eyeing the stack of squash that has built up on the kitchen counter, wondering how many more friends you can gift your harvest to before even they stop answering the door.

And woe betide you if you skip checking for a few days – when you return to the garden and lift up the lowest squash leaf, you’ll inevitably find one monster marrow lurking like a squat green fiend.

We make these fritters all the time in the summer, and we’ve adapted the recipe by adding fresh corn and cheese, so we’ve been meaning to re-blog this recipe ever since. When we decided to make Swedish Meatballs, I knew we had to also make the traditional side dish, a sweet and sour quick-pickled Swedish cucumber salad flavored with dill. We added red onions, because they add great flavor and color to the dish. If onions are not your thing, feel free to leave them out and just serve the cucumbers on their own.

In the meantime, our summer garden has been producing some delicious harvests, and this week we’d like to talk about our beets (that’s beetroots to you in the U.K.). There’s a reason why beet and goat cheese salads have been ubiquitous on menus for as long as we’ve had menus to peruse: it’s a fantastic combination. But like any classic pairing, the devil is in the details. I adore beets, but they often need a little coaxing to bring out their best flavor. They are referred to as having an “earthy” flavor by those who love them, and “like dirt” by those who don’t. That earthiness, which is found in many root vegetables like carrots and potatoes, is produced by a compound called geosmin.

(Nerd note: geosmin is also found in one of my favorite scents, and favorite words, petrichor – the smell of the earth when it just starts to rain.) Acids break down geosmin, which is why beets are often paired with a tart vinaigrette. Tart cheeses, like chèvre, feta and some blues are a tasty foil to that sweet earthiness.

But despite its rather unprepossessing appearance, its urban ubiquity, and the unpleasant electric-shock feeling of walking into one, nettles are one of the most nutritious and tasty spring greens you can cook with. Last spring we made a nettle risotto with garlic and taleggio, and this year we’re combining nettles with leeks and potatoes to create a rich, green soup, sprinkled with brown butter – garlic croutons and wild violets from the garden.

We’ve been dreaming about Michael Solomonov’s hummus recipe (from his incredible cookbook  Zahav), since we first made it in 2015. You might remember hearing about it because it was one of those recipes that was everywhere, at least in the food blog world. It seemed like everyone and their cousin Sally was making it, raving about it and blogging it. Well, ever on the cutting edge, we’ve finally come up with our take on it and not a moment too soon. 

We give our version a twist with the addition of white (shiro) miso, which is one of our all-time favorite ingredients and something we have permanently in stock. Miso has a deeply nutty, slightly fermented saltiness and a hint of sweetness that is just delicious, especially when paired with something tart, like lemon. Along with the (also nutty) tahini, it adds a layer of flavor that hits just the right note.

Let’s get this out of the way upfront: there’s a meat-and-fruit tradition in cooking that we’re just not a hundred percent on board with. There’s nothing intrinsically wrong with that kind of combination, but the problem occurs when the fruit is overly sweet and there’s nothing to balance it out. When you have a fatty cut of meat — such as lamb — or fish, such as the wild salmon we use here — it benefits from being cut with an acidic component. It’s the same reason we use oil and vinegar together in a salad dressing. 

We’ll often use lemon in our dishes to contribute that balance, but this week we’re looking at how pomegranate molasses, made into a pomegranate glaze, can lend a similar complexity to the rich flavor of roasted salmon.

We’ve all got that ingredient somewhere in the pantry. It’s the jar of something you picked up at the store, maybe on a whim or maybe with a specific purpose in mind, but then it got forgotten and languished in your kitchen cupboard until you re-discovered it and thought “aha! I know what to do with that”. Pantry space is not infinite (we can’t all have a TARDIS) and there’s a limit to how many items we can store that we aren’t using on a regular basis. For us, this ingredient is pomegranate molasses.

In this case the “tumbleweed” is Arya, our rescue dog who, for a pup who lived her first year on the streets of West Virginia, is hilariously particular about the range of temperatures she finds acceptable. 70º – 75ºF is fine, but a few degrees in either direction and get ready for dramatic sighs and woeful glances.

Give grilled chicken thighs or breasts a long pre-cook marinade in Green Goddess dressing, and then char them to perfection along with sweet red onions. Then dollop more herby dressing on them for good measure and eat dinner under the stars.

Well, it was inevitable. Last week, after complaining that the summer had been so cold after a spring that was so cold and a winter that was so very cold, we finally got hit with the annual New York heatwave. And to the friends and family members who always say “OMG I love this heat! I could take it all year round!”, I literally do not know who you are and please get off me with your sweaty hug. While we were merrily cavorting around the garden a few days ago, tending to the herbs, the tomato plants and the budding zucchinis, now we’re staring sadly through the window from the air-conditioned interior. It may look pretty out there, but just half an hour in the sun and we both tend to go all Mad Max Fury Road. And nobody wants that.

So if we can’t go to the herbs, the herbs must come to us. And that’s best achieved in the form of Green Goddess dressing. If you’re not familiar with it, it’s basically a fancied up ranch, loaded up with Greek yogurt, a little mayonnaise, garlic and all the soft herbs in the garden.

Matt here. Emily’s going to come in with the important tasting notes and all that later in the article, but I just wanted to share an anecdote from our very early cohabitation. When we first moved in together, I remember I was clearing room in the fridge – and at the time, Emily had a really beautiful spacious fridge (I think it was even bigger than the one we have now) and there was plenty of room to hide stuff at the back of the shelves. I was clearing out room to fit in whatever we’d bought together at the store, and I spotted a jar whose contents were unfamiliar to me. I opened the lid and, I don’t remember now, but I probably cursed. I think I might have warned Emily that there was something really bad in there that needed to be thrown away right that second, and preferably triple-bagged. I warned her that we might have to replace the fridge. I warned her that we might have to move.

Don’t be alarmed by the whole head of garlic used in the sauce; like some kind of magic trick, blending the whole, unpeeled cloves with lemon juice neutralizes the formation of allicin, which is the chemical responsible for garlic’s harsher flavors. The resulting sauce is delicately garlicky, with almost no pungency.

You know, when we can all go outside, hang out on the deck with friends, throw stuff on the grill, enjoy the warm summer’s evening because OF COURSE NOT, IT’S JANUARY, WE JUST GOT DONE WITH -10F TEMPS, ARE YOU CRAZY. And yet this weekend my inbox included an email from our favorite national home-improvement chain inviting me to shop all their grill options. Thank you, Home Depot, I’ll wait until I can defrost the patio furniture before I start thinking about firing up the grill.

But who are we to tell you when you can and can’t eat something? If you want to make a strawberry Pavlova in November, or roast a butternut squash in March, you do that, friend, and go with our blessing. If you feel like grilling meatballs on a stick in January, whether you brave the cold to man the grill, or use a grill pan on your stovetop, or forgo the grill entirely and opt for the broiler, is there any good reason you shouldn’t? There isn’t. There’s no good reason at all.

We’re as guilty as anyone else of “lazy salad syndrome”. If we can get away with opening a box of pre-rinsed greens and throwing on a dab of supermarket dressing, we’ll do it. As a side salad, that might just about be acceptable. But if we’re making a salad as its own dish – for a quick summer meal, for example – it’s inexcusably lame. But with just a little effort and really no time at all, I can prepare this white bean salad with ingredients I already have in the pantry. Most of the ingredients for this recipe are kitchen staples, and the only things I need fresh are cucumber, tomatoes, feta, and lettuce.

Grilled chicken doesn’t always need a long marinade to be full of flavor. These spend just a few minutes in a lemony-garlicky mix before they’re grilled to charred perfection. Making a quick-marinated chicken dish that we can throw on the grill is an ideal solution. And, if we can use the Mediterranean heroes of the summer vegetable garden—tomatoes and basil—so much the better. Not only do tomatoes and basil taste great together, they also have a symbiotic relationship in the garden; companion gardening with the two plants in proximity improves their resistance to pests.

We roasted eggplant until it became soft and silky and topped it with Chermoula (a North African spice mix with garlic and preserved lemon). Sprinkled with tart feta cheese and fresh herbs. 

This dish is adapted from a recipe from Yotam Ottolenghi and Sami Tamimi’s brilliant cookbook, Jerusalem. Ottolenghi is an Israeli-born British chef who, among other things, writes one of my favorite recipe columns in the Guardian. He’s a master of incredibly flavorful vegetable dishes, and has a particular knack for eggplant.

Eggplant can be controversial: some love it, some hate it. If you’re on the hate side, it might be because you haven’t had it cooked well. Too much oil and it can be greasy, not enough and it turns rubbery. But grilled with a miso glaze, or roasted with Middle Eastern spices, it’s absolutely delicious.

Most people have probably made a variation on moules à la provençale (mussels in a garlic-tomato sauce) or moules marinières (with white wine and butter). Today we’re using a Thai-style red curry paste and a quick vegetable sauté to create a bold, spicy broth that pairs perfectly with briny mussels. Add some easy rice stick noodles and you’ve got a complete meal on your hands in 20 minutes or less.

Before we moved to Brooklyn (so way before we headed up to Beacon), Matt and I lived in one of the most cross-cultural neighborhoods in New York City, Astoria, Queens. It was like the real-life version of one of those 90s comedies. You know, the ones where the cab driver is sitting next to a lawyer who’s sitting next to a dominatrix and they’re all eating souvlaki prepared by a Sikh cook and served by a Russian waitress. It was like that.

It’s still one of the best places in the city to find ingredients from all over the world, especially Mexico, India and Greece. If the area is known for one type of food in particular, it’s Greek. Our weekends often involved a stop at Titan Foods where we would spend most of our rent money on olives and Feta cheese. If you’re ever in the area, check it out. It’s like the Disney-land of Feta up in there, not even kidding.

In this case we’re using feta as the sauce (more of a dip, really), for some incredibly delicious cumin-dusted roasted cauliflower.

I’m not sure why but I used to think of risotto as a big complicated project. Somehow I got it in my head that you absolutely must make your own stock and add it a thimbleful at a time and stir and stir and stir and if you stop stirring for even a second, the whole thing turns to garbage.

None of that is true.

While it is true that the better the stock is, the better your risotto will be, there are a lot of ways to impart flavor into the dish using simple, everyday ingredients.

And while I’ve never had great results from simply pouring in all the stock at once, the process is a lot less delicate and precise than you might think.

The rice itself should take less than 20 minutes to go from raw to beautifully creamy and al dente. Even including the time it takes to cook the mushrooms, that’s well within the realm of an easy weeknight dinner.

I’m a film editor and several times over the span of my career, I’ve thought about moving from New York City where I was born, to Los Angeles. Many of my friends and colleagues have done it, and most of them love it there.

It’s so beautiful, they say. True, I’ve been and it’s very pretty. There’s a lot more work and for the price of a Brooklyn studio, you can buy a three bedroom house with an avocado tree in the back! All true and, yes, this makes me jealous. And the best part? It’s warm all the time and it never rains! Aaaaaand you’ve lost me. 

For me, one of the great joys of life is feeling the crisp, cool air of Fall. When the weather turns it feels like a shock, every time. Even better if that cool air comes with a blustery rain storm. The type of weather that practically forces you to cook something warm and comforting. To stay home and watch movies or play video games all day. (Nerd note: Matt and I are re-playing “The Last of Us” and, oh my god, it’s so good).

When I heard it was going to turn cold and rainy last weekend, I knew right away what I wanted to make; spicy chili with all sorts of yummy toppings stuffed inside a baked sweet potato.

This chicken with lemon, garlic and basil – the flavors of an Italian summer – cooks in one pan and gets a delicious crispy skin. 

Even though we are now fully immersed in September, in our neck of the woods yesterday was actually the hottest day of the year so far. The thermometer that we keep by the chicken coop was up to 99ºF (37ºC) by noon, and stayed there until way past dark. Not to sound like a whiner, but that meant that our kitchen was hotter than a three dollar pistol and it was seriously messing with my plans. See, I had been dreaming about making this chicken all summer, and I had already bought all the ingredients that I couldn’t pick from the garden so I just decided to make it anyway, inferno be damned.

This chicken is kind of a variation on one of my favorite dishes of all time, Chicken with Lime, Garlic and Cilantro. It has the same incredible combination of crispy skin and tender meat that is just so damn good. But instead of the latin influence, this version is like a summer vacation in Italy, with the flavors of lemon, garlic and fresh basil.

When life gives you basil, make basil pesto. It’s the perfect accompaniment to salads, pasta, as a bake-in sauce for chicken and many other dishes. Since we’re cheap, we substituted affordable walnuts for pricey pine nuts. 

We’re finally getting better at this whole “growing stuff” thing. Our first year here we struggled with just a few herbs on the deck. We grew some thyme, a bit of sage, a little rosemary. One scraggly little basil plant that got some sort of fungus and never recovered. Our second year was a little better. The rosemary was bushier, the chives flowered beautifully. Basil seemed happier.

This year, pow! Basil explosion. We’re growing them in large pots in a very sunny spot and they’ve gone absolutely bonkers. It’s like Day of the Triffids out there.

I wanted something a little sweet and tart to go along with our Grilled Steak with Blue Cheese and Chive Compound Butter and as soon as I saw Ina Garten’s recipe for Balsamic Onions, I knew I wanted to do a version of it. I added thyme because I love their flavor with anything roasted, though rosemary would also be great. I also increased the cooking time by quite a bit because I wanted the onions to be quite soft and caramelized, as opposed to still crunchy.

In the 1970s, the Upper West Side of Manhattan where I grew up was a true melting pot of cultures. I went to a bilingual grade school where classes were taught in both English and Spanish, and staying for dinner at a friend’s house often meant getting to have Arroz Con Gandules (Puerto Rican Rice with Pigeon Peas) or Mofongo (mashed green plantains with chicharrones).

My absolute favorite dish back then was Pernil (Roasted Pork Shoulder), which is flavored with lots of citrus, cumin and cilantro. Just thinking about it is making me hungry, but until I find the time to make a whole pork shoulder, I thought I’d take some of those great flavors and turn it into a much more weekday-friendly chicken dinner.

The fact that Matt grew up in a rural English village and I grew up in New York City means that, every so often, we have absolutely no idea what the other person is talking about.

For example, here’s an exchange that may (or may not) have occurred recently (it did not, but work with me here).

Emily: Less hit the bodega for a ’40 and stoop it till we mad toasted. You know you down, don’t front.

Matt: What’cha talking abaht, yer daft bint? Put yer knickers on and make me a cup of tea.

Then there was the time I convinced Matt that in New York City, it’s very common for dogs to wear prescription glasses. “Really?” he said, and then I laughed until I got a cramp.

Then he tried to convince me that in Scotland, there are huge, orange cows with hipster haircuts that look exactly like the mayor of London, Boris Johnson. No way, buddy. Like I’m going to believe that.

So you can imagine the fun I had trying to describe what ‘buffalo sauce’ is. I’m not sure how we’re still married.

Anyway, on to our sangwich. Let me start by saying that I would be quite happy if buffalo sauce & blue cheese dip were on pretty much everything I ate for the rest of the summer. These are the kind of bright, zingy flavors I just go crazy for.

Add to that perfectly grilled shrimp, creamy avocado and crisp lettuce and you’ve got yourself a seriously delicious sammich.

Sometimes the best approach to fresh produce is to treat it lightly in the kitchen, and let its natural flavor shine. This is how we love to eat radishes: a little sea salt, a little sesame oil, and that’s it.

This is a very simple take on the classic combination of radishes and butter. In this case the butter has been replaced with toasted sesame oil which has a wonderful rich nuttiness that pairs beautifully with the crisp radishes. Maldon Salt is my favorite flaky sea salt but you could use fleur de sel or whatever kind you prefer. It’s so simple but it’s incredibly delicious.

Not you’re not crazy, I’ve blogged this recipe before but I’m re-posting it for two reasons; One, I wrote out the recipe in a bit more detail so it’s easier to follow and two, I took much better photos. This is the first time I’ve updated a post for mostly cosmetic reasons but the truth is, this is one of my favorite recipes ever and the original pics were just not doing it justice. Can you tell that I really, really want you to try it? Therefore I present to you, Miso Salmon, Part Deux.

If you’ve never cooked with miso, miso salmon is a really great recipe to start with. While most of us are probably familiar with miso in soup form, it’s also fantastic in all kinds of dishes, from savory to sweet. I use it in salad dressings, I love it drizzled on roasted vegetables (try this same glaze on eggplant, yum).

One of the great aspects of miso is that it keeps for ages in the fridge (seriously, months and months), so you won’t have to go on a miso bender just so you won’t waste it. I mean, you’ll probably go on a miso bender anyway because the stuff is delicious but it won’t be for economic reasons.

This miso salmon recipe is certainly what I use it for most often (and how I love it best). The glaze has a great balance between savory and sweet, and the skin gets wonderfully burnished and crisp. It also literally takes just a few minutes from start to finish, so it’s my absolute favorite weeknight dinner. Quick or not, for me, this is one of the best salmon recipes of all time. I could have it twice a week, happily.

Jalapeño Popper Stuffed Chicken BreastsWith the exception of East Williamsburg, just about every apartment I rented in New York City had at least one bodega on the corner. In fact most blocks had several bodegas, a couple of Korean fruit & vegetable markets and possibly a Whole Foods/Trader Joes.

Now that we live in the Hudson Valley that’s just not the case any more (though now we own a house and have a garden and a dog and a bunch of chickens*, so okay, fair trade). But the truth is that, even three years later, I’m still adjusting to the idea that I can’t yell out my window and have someone throw a jalapeño at me.

*I didn’t include cats in this list because I always had cats in the city.

So the other day, I’m walking around the grocery store and find that organic, thin-sliced chicken cutlets are on sale. “Awesome!” I say to myself, because I am literally that much of a dork.

Now if you follow this blog at all, you might have noticed that I almost always use thighs for baking and roasting because I think they have much more flavor. But the one thing you can’t do (easily) with chicken thighs? Stuff them.

So now I’m imagining some kind of crispy, panko-crusted chicken stuffed with some sort of cheesy, creamy, spicy deliciousness. Sounds good right? I thought so too, until I got home and realized that I had completely forgotten to get jalapeños which, surprisingly enough, happen to be a rather important ingredient in jalapeño-popper stuffed chicken.

I hemmed and hawed about it for about four seconds before I decided that, yup, nothing else would do. Back to the store for three dollars worth of chiles.

Which is not a terrible thing when you can get great stuff like butternut squash, apple cider and baby kale.

Skillet Chicken with Wine, Shallots and Mustard

You know how sometimes when you watch a cooking show (don’t judge me, I find them very relaxing), the host will say something like “this ____ is so simple and quick, it’s easier than ordering a pizza!” and then they proceed to use 6 different pots and pans (on their massive 8 burner stove)? Well, bollocks to that. The only thing easier than ordering a pizza is having someone else order it for you.

And even more to the point, there is nothing easy about a dinner if I have to utilize every pot I own to make it.

That’s why I’m always looking to expand my repertoire of recipes that can be made in a single pot or pan. This one was inspired by a Martha Stewart recipe, but I’ve adapted it to cook in a skillet which makes it faster and also gives the chicken deliciously crispy skin. The sauce is absolutely amazing, so make sure to have plenty of good, crusty bread to sop it up.

Roasted cipollini onions are a great accompaniment to any meal – they have a sweet and savory caramel flavor that we combine with thyme for added depth.

If you’re not familiar with them, Cipollini onions (pronounced chip-oh-lee-knee) are a thin-skinned, mild onion about the side of a golf ball. They’re pretty easy to recognize because they have a flattened, almost UFO-ish shape that’s very distinctive. The name literally means “little onion” in Italian. Go figure.

Like all little onions, they are kind of annoying to peel but if you boil them for 30 seconds and then run ice-cold water over them, it’s really not too bad. My advice is to make more than you think you’ll need because they will disappear quickly.

Of course, it’s easy to get inspiration from Italian cuisine – there are are a handful of classic pasta dishes that we fall back on for dinner parties or quick weeknight meals, and I think this might be one of our favorites – it’s cheap, easy and phenomenally delicious. We make it all the time.

I feel like it was only a few weeks ago that every post I wrote seemed to start with me whining and complaining about how cold it was outside. Well, prepare for a déjà vu because it’s frakking freezing again and it’s not even Thanksgiving yet. Oh joy. I know it’s going to warm up a bit again before the semi-permanent winter-long deep freeze hits us but, seriously Nature, can you give a girl a break? See, one of the things about buying a lovely, hundred-year-old house is that it’s goddamn drafty. Luckily I have a dog and two cats that want to be on a lap at all times so that helps. A bit. A teeny, tiny bit. Also, soup.

Speaking of déjà vu (and soup), it was about this same time last year that we posted our recipe for Mashed Butternut Squash With Thyme And Mascarpone, which has become one of the most popular recipes on NwK. I think butternut squash is so popular because it’s not only delicious, it’s also extremely easy to cook well. It has a gorgeous, silky texture (without any of the stringiness you find in a lot of pumpkins and squash) and it also has that beautiful, vibrant color that just screams Fall. It’s the vegetal equivalent of wearing a cable-knit sweater while walking through a pile of brittle, umber leaves. It’s Mr. Autumn Man’s favorite gourd.

This version of shredded brussels sprouts with bacon and pecans might be the perfect Thanksgiving side dish, and can be made ahead to save you T-day stress.

I admit it. I love brussels sprouts. And not just for Thanksgiving, either. I think it’s probably one of the vegetables that Matt and I make most often. Our standard go-to recipe is to split them in half, coat them with olive oil, course salt and pepper and roast them in a very hot oven until they are as brown and crispy as french fries. The only tricky thing about that method is that they have to be served piping hot, right out of the oven or they get a little soggy. Still tasty, but not transcendent.

For me, getting all the side dishes timed perfectly so they’re at the exact perfect temperature by the time the turkey is ready is one of the most stressful parts of Thanksgiving. I feel like the kitchen becomes a ten ring circus, with every burner going on the stovetop and a million things stuffed into the oven. Oy, I’m giving myself agita just thinking about it. That’s why I like to serve at least a couple of dishes that are great at room temperature. These brussles sprouts fit that bill because they are absolutely delicious hot, warm or room temp.

This recipe combines my three favorite things. It’s fast, it’s cheap and it’s delicious. And easy. I know that’s four but I don’t have time for semantics. I’m in a rush here! (I’m not really, but one of the best things about this recipe is that, other than mixing the sauce ingredients together and throwing in the chicken, there’s really not much else to do. That’s why it’s perfect for a weeknight dinner). Bung it in the oven, throw on some rice and by the time you’ve opened a bottle of wine and cycled through your Netflix options, dinner is ready.

We put together two different versions of salsa verde with some tomatillos, avocadoes, garlic and spices, and pretended to be into sports just to hang this article on a game theme! Hint: we are not into sports.

I’ve always envied people that were really into watching sports. I would love to care about something (other than nerdy television shows) enough to paint my face, don a kooky costume and brave the cold, just to prove my commitment and loyalty. To feel the agony of defeat in the hopes of, one day, just maybe, getting to experience the glory of ultimate victory.

But nope. Just don’t give a toss. Matt doesn’t follow sports either (with the exception of the occasional World Cup match, of course).

We all know there are vegetables that many, many people despise. (A Brussels sprout looks around the room nervously and begins to back away. Soon to be followed by a turnip. And then a beet. The beet grabs a stick of celery from a nearby Bloody Mary as it exits.) But the thing is, I’m pretty sure that most people just think they hate these vegetables. And the aversion they experience is not because these maligned veggies are actually gross*, but because they’ve most likely had them prepared incorrectly.

*Except for celery which actually is gross and no amount of jiggery pokery will change that.

Take Brussels sprouts, for example (always at the very top of the “hated vegetable” list). Many people boil them until they are a thoroughly revolting shade of gray and the texture of a moldy sponge. They also think that a little pat of butter will camouflage the criminally sulfurous smell. Then they wonder why there is a child-shaped hole in the wall and little Timmy has run off to join the circus. BUT, take those same sprouts, coat them well in olive oil, salt and pepper and roast them in a very hot oven and they’ll come out as crisp as french fries and just as addictive. And little Timmy can stay in school and become a doctor, or a film editor or some other, equally respectable occupation.

Simple and Delicious Fried RiceI might have mentioned that we’ve had a lot of company this summer. Like, a lot. And while we both love entertaining and cooking for a crowd (seriously, we’re so, so nerdy about it), it can be quite draining. So now that summer’s over and we’re back on our own, all we seem to be craving are the simplest, easiest, quickest things we can come up with. I mean quick like a sliced tomato sprinkled with Maldon salt and topped with a basil leaf. Or a slice of bread topped with mango chutney and melted cheddar. That kind of quick.

Though for some unfathomable reason, Matt frowns on my I’m-too-tired-to-even-care dinner, which is frozen peas eaten directly out of the bag. See, it’s genius because they defrost as you chew them. Oddly enough, Matt made that same exact face when he caught me in the… act.

Anyway, for those of you who I haven’t traumatized, I’m going to tell you something shocking. Are you ready? If you have some cold, leftover rice in your fridge, you are seconds away from a delicious, healthy dinner. That’s right. Seconds. Okay, minutes, but making fried rice is still crazy quick.

And once you know the method, this homemade version will be so much better than the greasy, soggy kind that you get free with your Chinese take-out.

We love this Puy lentils with spinach dish, a balanced recipe full of healthy pulses and colorful spinach greens. Happy July 4th! Of course, this blog post is pre-recorded, so you’re probably reading this on July 6th, (or August 23rd if you’ve just got around to cleaning out your spam folder. Not judging!), but as we write this, it is a wonderfully sunny and warm July 4th, and we’re all sitting in the garden, grilling burgers and drinking beers – the sound of laughter and ball games percolates across the neighborhood, fireworks are starting down by the Hudson River and … Okay, I can’t keep this up, it’s pissing down, it’s been storming heavily for two days straight, the garden is basically flooded, and the only people enjoying a ball game are the German World Cup team. We’re sitting in our living room eating dry crackers and watching a Star Trek: Next Generation marathon (in between World Cup matches, of course). We downloaded a firework app on our iPad. Wheeeee. Look, that one’s in the shape of a hot dog. Happy now? Are you? Are you happy? *Sobs*

Tomorrow (yesterday for you) will be (was) sunny and warm, so fireworks, grilling, drinking and general merriment has been postponed a day. But here’s the thing. Some dishes are better prepared the day before, and left to marinade for a day. And, lucky us, this orzo salad is one of them.

SCENE 1. INTERIOR. DAYIt’s brutally hot outside. Matt and Emily (plus a dog, two cats and five chickens) are sprawled all over the living room, fanning themselves.

MATT: It’ll be July 4th soon! We should make something appropriately red, white, and blue, like you Americans (sniff)… enjoy.

EMILY: First, (waving citizenship papers) that’s *we* Americans, buddy, and second, what do we have in the pantry that’s red and blue?

MATT: I WILL FIND OUT. (Matt disappears into the pantry for several hours. Cue special effect of the hands of a wall clock spinning forward. Eventually he re-appears with a can of tomatoes and a ball of blue string.)

EMILY(Long, long pause). What other colors do we have?

MATT(Chews on the ball of blue string, thoughtfully, and looks out of window at the deck, where a Triffid-like mass of herbs threatens to destroy the house.) Green. Lots and lots of green.

EMILY: THAT GIVES ME AN IDEA. (Grabs sunglasses and a large pair of scissors, heads outside.) Get ready to be…(lowers sunglasses enough to peer over them)…REFRESHED.

I like to think of myself as an organized person. I mean, I’m a film editor, for chrissakes. I basically organize millions of digital moments into a cohesive story for a living. So why is it that I cannot, for the life of me, plan ahead and shop for a week’s worth of recipes?

Is it because I was raised in New York City, where 24-hour bodegas and Korean markets permit, nay, encourage a person to decide at 11pm that they’re going to make a Chard Onion and Goat Cheese Tart even though there is neither chard, onion or goat cheese in the house? Why are you looking at me like I’m attempting to deflect blame for my questionable decisions? Ahem. Anyway, now I live in the boonies and that means I either have to:

A. Get organized and make a menu plan and corresponding shopping list at the beginning of each week.

B. Hit the lottery so I can hire a personal chef (one who allows me to post their recipes all over the internet and hover over their shoulder taking pictures as they cook).

C. Create delicious things that use pantry staples almost exclusively so I can continue my reckless and dangerously chaotic lifestyle.

Guess which one I chose?

I almost always have everything on hand for this recipe and, luckily, it also happens to be incredibly good. Obviously if  you eat chicken and enjoy crispy things, nothing’s going to beat real fried chicken but I think we can all agree that deep-frying is not really an option for an easy, healthy, weeknight dinner. This chicken though, is all those things and more. It gets great flavor from the tangy mustard, garlic and thyme and develops a crunchy, golden brown crust.

I also make a simple yogurt sauce to go with it (if I remember to make or buy yogurt), but it’s equally good with just a squeeze of lemon and a sprinkle of Maldon salt over the top.

It’s a warm, early summer evening and after days of torrential, flooding rains, the sky finally clears and you can see a million stars. You can smell the damp earth and the new leaves on the trees. You can hear the frogs that have just woken up from their winter-long sleep. You pull up to the lovely, perfect little restaurant where you’ve reserved a table, excited because you’ve heard great things about it and also because it’s been a long, hard winter and you haven’t gone out in what feels like forever. You hold your husband’s hand as you walk to the entryway, listening to a stream gurgling in the distance that you can’t see because it’s the country and it’s dark. You walk in and the place is adorable and there’s a seasonal cocktail menu written on the chalkboard above the bar and then they seat you at a table RIGHT NEXT TO PETER FRIGGIN DINKLAGE.

Yup. In the car on the way to the restaurant, Matt and I talked about how there was no Game of Thrones on Sunday because of Memorial Day and then they seat us right next to Tyrion Lannister himself. How tempted was I to say the waitress “Bring us bread, two of those little fish, and some bacon burned black?”  Very. But I restrained myself. Just barely.

Oh, and they also had grilled ramps. So, yeah. It was a good night.

The missus has been out sick this week, so I’ve taken over blog duties. Last weekend I expanded on my bread baking with a really good multigrain recipe from Martha Stewart (to be blogged later) that involved three kinds of flour, two kinds of grain, and four kinds of seeds, and after all that I had to have a good lie down in a darkened room.

For this post, conversely, I decided to try something else I’d never done but keep it as simple as possible. Yogurt is something that we always try to have in stock in the fridge – not only is it a fantastic breakfast option, especially with some toasted nuts or seeds, maple syrup or honey, or (when in season) fresh berries, but it’s a great stand-by for a host of other recipes, such as marinades, dips and saucy dishes such as curries. We often use it in place of sour cream, like in this Lemon Basil Sauce.

We almost always buy the Greek varieties of plain yogurt, which are strained and therefore thicker than the “regular” variety. People have started wars over their preferred brand of Greek yogurt – to avoid bloodshed, I won’t reveal the specific brand we prefer, other to say that it’s the one that’s not Chobani.

Home-made Greek yogurt is so much more delicious than even the best store-bought kind, and is also much more affordable. The best part is that you get to control the quality of the milk that goes into it and we found that even using the best organic, grass-fed, free-range, hormone-free milk was cheaper than buying it already made.

Butternut Squash Polenta

Somehow polenta has gotten the reputation of being difficult to cook. That you have to stand over it and stir and stir, and if you stop for even one moment, your lovely silky cornmeal will turn into a brick of yellow concrete. To that I say “pshaw!” [Matt says: I don’t know where she gets these expressions, I really don’t.]

The truth is, make sure the liquid (which could be water, milk, broth or a combination) is hot, and whisk the polenta in slowly, making sure it doesn’t clump. Once it’s all mixed in, you can cover the pot and just stir it every ten minutes or so, and it will be perfect and ready to serve in 30 to 40 minutes.

This recipe, which was inspired by Melissa Clark, has grated butternut squash in it, which gives it a lovely vegetal sweetness. We used it to make Polenta With Sausage and Onion, but it would be great for any dish that you would have polenta with. I’ve changed the recipe slightly because I like using coarse rather than finely ground polenta. I also added a little milk to the liquid, increased the amount of squash and decreased the butter.

Don’t use quick-cooking polenta for this. Not just because it doesn’t taste the same, but it also won’t give the squash the time it needs to cook.

Nerd Tips:
  • Avoid de-germinated cornmeal (the germ has been removed to increase its shelf life), as it’s not a whole grain. We really love Wild Hive Farm‘s Polenta but use any long-cooking brand you like.
  • Traditional polenta is made with water but you could substitute a portion with broth or milk if you want a richer flavor.
  • We sometimes add mascarpone which makes it especially creamy and rich.
  • Leftover Polenta will solidify into the shape of the container in which you store it. You can slice or cube it and then roast, grill, or pan-fry it. To make it creamy again, warm it slowly over low heat with a little broth, milk, or water, and stir. It won’t be quite as creamy as it was originally, but it should still be pourable.

Guys, I’m seriously worried that I might actually be living in a Portlandia sketch. Sometimes I watch it, and I laugh and laugh and then look around nervously to see if anyone is giving me the “um, that’s you” side-eye. I think it was the Battlestar Galactica episode that hit a little too close to home.

Nerd aside: some of you may remember my little black cat, Special Ed. Oh how I loved that boy. So Special Ed, being much adored, had about a hundred nicknames (mostly having to do with the fact that he was a skinny, scrawny, wee little gentleman). So during the height of my BSG obsession,  his name became “Edward James ALMOST” (another fave was “Roger PALTRY”). Still makes me laugh.

If you haven’t seen Portlandia, you’re probably wondering what the bleedin’ hell I’m on about, but one of their sketches is about people who pickle everything (a dropped ice cream cone, a used band-aid, a broken high-heel). Well, stop laughing immediately because pickles are delicious!

These pickled radishes are my go-to if I’m making tacos, quesadillas, or really any kind of  sandwich. They are so quick and easy and are just the perfect thing to perk up anything slow-roasted or long-simmered. Best of all, they’re ready in under an hour and last for weeks.

We aren’t ardent picklers, but we do have two favorites: quick-pickled red onions, and these tangy babies. You can also add herbs (I like thyme, bay leaf and tarragon best), chili flakes or whole dried chilies for spice.  I had a big tin of pink peppercorns that I picked up from Sahadi’s last time I was there so I added them as well.

Roasted sunchokes (also called Jerusalem Artichokes) make a fantastic side dish. They’re creamy on the inside with crispy edges and a mild, nutty flavor. They also happen to be packed with vitamins.

A couple of weeks ago, Matt’s sister Hayli got us tickets to see Asaf Avidan at Irving Plaza (quick aside: along with The Ritz and CBGB, Irving Plaza was the place to see hardcore, punk and ska bands when I was in high school. To this day, it still feels wrong to be in there without a mohawk and zebra-print creepers on.)

Anyhoozle, the show was great fun (thanks Hayli!) and since we stayed around Union Square, we got to walk around the Greenmarket before we headed back on the train. (I love living in Beacon, but I do miss that damn market. Seriously, there is nothing else like it). Since we were wandering, we didn’t really want to carry loads of stuff but I just couldn’t resist picking up some sunchokes, which are in season right now.

Roasted Sunchokes (Jerusalem Artichokes)Now you may be saying to yourself “Hmm, that looks suspiciously like the grizzled, terrifying hunk of old ginger I found hiding behind my refrigerator when I moved last year.” And it’s true that these aren’t the most attractive vegetable in Earth’s garden of delights but we wouldn’t let a trivial thing like that stop us from enjoying something so delicious, would we? Good answer.

Sunchokes are also known as Jerusalem Artichokes for some reason (they are neither from Jerusalem, nor are they related to artichokes. Go figure, but they are part of the sunflower family so that at least makes some sort of sense.) Whatever you like to call them, they have a lovely nutty flavor which some people say reminds them of water chestnuts.

Chinese broccoli is a tasty variation of the standard green, and we show you one delicious way to cook it with a sesame citrus dressing.

After what has felt like a gabillion months of (bone-chilling, face-freezing, fun-zapping) winter, this past weekend the sun peeked out from the behind the clouds and warmed our little corner of New York to a downright balmy 42 degrees.

So we did the only sane thing and grabbed our sunglasses, slathered ourselves with SPF8000 and went swimming in a crystal clear lake and let the fish nibble our vitamin-D deficient toes.

Just kidding! It was 42 friggin’ degrees so we braved the mud that is quickly replacing the permafrost in our driveway and drove to the little asian market we’d been itching to check out for ages.

Sure, by NYC chinatown standards the place is tiny but it packs plenty of great products into its two crowded aisles. Among many other fun things, we bought a bottle of ponzu, some chili-garlic sauce, a big jar of sesame seeds and, best of all, a huge bag of incredibly fresh chinese broccoli.  Aw yeah! Party at the Cliftons.

Recently I had one of those nights when I came home late and exhausted and all I wanted to do was flop down on the couch and watch something fun on TV (current obsessions: House of Cards, True Detective, Ripper Street, The Americans and don’t even call me on Sunday nights once Game of Thrones is back BECAUSE I WILL NOT ANSWER THE PHONE).

Those are the nights when I want to cook something fast and easy, and I don’t want to have to make a special trip to the store to get ingredients. I looked in the pantry and thought “Yes! You can do this, Clifton. Find something in there to make that doesn’t suck!” Well, I’ll tell you this. A warm bowl of homemade classic tomato soup does not suck.

Until tomato season comes round again (it’s hard to remember a time when the yard wasn’t basically permafrost), big cans of good tomatoes are a perfect pantry standby. You can make this classic tomato soup with either crushed or whole plum tomatoes, if you don’t mind crushing them with your hands. Some of you might quite enjoy doing that, I don’t know, that’s your business. Either way, you will want a stick blender to finish the job.

NOTE: If you’re feeling extra-fancy, make a little grilled cheese sandwich to go alongside your masterpiece. I, of course, was far too lazy even for that and just spread some goat cheese on a cracker and sprinkled some black pepper and scallions over it. Oh,  and some chopped radishes on the side because they’re also red.

All you need is day-old steamed rice, some good garlic, and an egg to make a quick breakfast, lunch or supper – garlic fried rice.

Blah blah, winter. Blah blah snow. Blah blah thiswinterismakingmeinsane. Okay, obligatory whining done. Whew, I actually feel better.

Rice! (I love a good non-sequitor). Is there a a container of leftover rice in your refrigerator right now? If so, you are in luck, my friend. Why, you ask? Because your mission (a delicious, quick and easy breakfast) should you choose to accept it, involves that rice, some garlic and an egg.

Basically, this is a garlic fried rice recipe from the Sundays at Moosewood Restaurant cookbook, that I used to make all the time. I’m pretty sure the recipe was actually called the Philippine Breakfast and it’s so simple, I didn’t even need to look it up to remember how make it again.

Don’t be put off by the garlic. It gets lovely and nutty when cooked this way. Not pungent at all.  I like to serve it with a few slices of avocado, a lime wedge and a sprinkle of Maldon salt. Matt loves it with a squirt of sriracha.

Nerd Tips:
  • Be careful not to burn the garlic. Burned garlic is horrifying and if you really scorch it you should really throw it out, clean the pan and give it another go.
  • Garlic fried rice works with pretty much any kind of rice (except wild rice which isn’t really rice at all).
  • If you like things extra-spicy, try using a habanero pepper, but don’t sue me if you burn your bits and pieces off.
  • The pepper vinegar gets better and better as it sits, so make extra and store it in the fridge for next time.

Okay, as those of you who live on the east coast of the U.S. know, winter has decided to be extremely, um… generous with us lately. In fact, we are pretty much being bent over it’s knee and spanked like a naughty toddler. We still have a foot of snow on the ground and there’s another snowstorm coming tonight. Yay? (I figure if I pretend to be cool/whatever about it as opposed to horrified, winter will get bored and GO AWAY).

WINTER: Warm weather is life’s great lie! Once you accept your icy fate, this frozen hell-scape will welcome you and you will know peace!
EMILY: [Chomps on a gingery noodle] Okay.
WINTER: Is that all you have to say? No begging? No mewling?
EMILY: [Goes for seconds] Nope.
WINTER: Well, that’s disappointing. [Makes a small child slip and drop his hot chocolate]. Ah, better.

No joke, for the first time in my life I had to drive on a highway through a blizzard and it was not fun (remember, this New York City girl just got her driver’s license a year ago). Matt practically had to pry my hands off the steering wheel when we got home because I was gripping it so tightly.

Luckily there are some dishes that work well regardless of the season, and this is one of them. I would happily make this on a warm summer night (remember those?), or on a freezing cold one. It was inspired (again) by a Melissa Clark recipe, though I changed the ratios a bit (more bok choy, added hoisin and sriracha). It’s got a great kick from the ginger and chili, and you should feel free to make it as spicy as you like.

I’m calling this a salad even though it’s technically more of a “slaw”. Unfortunately, Matt despises that word and I don’t want him to make that “Um…ew” face that I find hilarious except when it’s directed at my beautiful Asian slaw. Excuse me… salad.

What words do you inexplicably hate? My sister-in-law, Kathy, hates the word “moist” (so I try to use it as often and as awkwardly as I can). “Boy, those (meat)balls sure look moist!”

I can’t stand the word “meal”.  As in (bored diner waitress plops down plate) “Enjoy your meal.”  (I convulse and try to picture my happy place).

Well, this slaw is very moist and would make a great addition to any meal.  (I think I just died).

White Bean, Roasted Garlic and Feta DipIt’s party season which, yay!!! So much fun. But also, boo!!! So much work. That’s why it’s great to have a few easy, fast and inexpensive recipes to fall back on when the hungry hordes arrive (auto-correct keeps changing hordes to whores. So if your house is full of hungry holiday whores, all the power to you!). Ahem, *adjusts glasses*.

Dips! Dips are great. Everyone loves dips. They can sometimes be a little boring though, right? I love a good onion or spinach dip, but sometimes I want to shake it up a little bit. This White Bean, Roasted Garlic and Feta Dip is basically like a Hummus but, to me, a whole lot tastier. It’s creamy from the yogurt, tart from the lemon and feta and plain old delicious from the roasted garlic. Awww yeah.

Best part? I bet most of the ingredients are in your pantry and fridge right now. Maybe not the feta cheese, but everything else is probably there. I’m right, aren’t I? Go look!

Miso Glazed Crispy-Skinned Salmon

Miso salmon is one of our absolute favorite weeknight standards. When our local supermarket has good salmon (which is most of the time), we get a pound center-cut (so they cook evenly) and make this dish.

If you’ve never cooked with miso, this is a fantastic recipe to start with. While many Americans are probably familiar with miso in it’s soup form, it’s also a fantastic ingredient in all kinds of dishes, from savory to sweet. It’s great in salad dressings, drizzled on roasted vegetables (try this same glaze on eggplant, yum).

One of the great aspects of miso is that it keeps for ages in the fridge (seriously, over a year). You won’t have to go on a miso bender just so you won’t waste it. I mean, you’ll probably go on a miso bender anyway because the stuff is delicious but it won’t be for economic reasons.

This salmon dish is what I use miso for most often (and how I love it best). The glaze is delicate and doesn’t overwhelm the fish and the skin gets wonderfully burnished and crisp. It also takes just a few minutes to make so it’s a fantastic weeknight option. Quick or not, for me, this is one of the best salmon recipes of all time. I could have it twice a week, happily.

You’ll want to use white (also known as sweet) miso for this. Red miso, which is fermented for a much longer time, has too strong a flavor and would overpower the fish. I serve it with steamed rice (sometimes white, sometimes brown) and my go-to with everything Pickled Cucumber and Avocado Salad. I didn’t have cucumbers last night; we made a quick salad of avocado, arugula and baby kale drizzled with lime.

Oh, and Matt wanted me to make sure to mention that this is his favorite fish recipe of all time. He says that about a lot of recipes (good husband), but I could tell he really meant it.

Pickled Cucumber and Avocado SaladI’ve already admitted that I’ve become obsessed with cucumbers since discovering my dog loves them so much. I love them in cocktails, dipped in Feta-Yogurt Sauce, even just plain. But lightly pickled with rice vinegar and sesame oil is my all time favorite.

This is an incredibly quick and easy side dish with Thai Shrimp Cakes. It’s also great with seared salmon or any other fish. It takes seconds to make. It’s also vegan and gluten-free, to boot!

Today we’re making kale and walnut pesto (inspired by The Hop’s Kale and Almond Pesto), to go with our Sausage with Creamy Polenta and Kale Walnut Pesto. Even if kale is not your favorite thing, this is a good way to try it because it’s so good for you, but also deliciously cheesy/nutty.  It would definitely be great on pasta or on anything that basil pesto is good with.
 
We would claim to have used nuts from our black walnut tree, but as the linked article admits, they’re impossible to harvest efficiently!
