Smoky and Creamy Corn Chowder with Shrimp

When the cold evenings get you thinking about a warming supper, but there’s still farm fresh corn in the market, corn chowder is our favorite way to ease into autumn. This version combines sweet corn and smoky bacon in a creamy broth, dotted with lightly poached shrimp and  sliced jalapeños to soothe the end-of-summer blues.

What happened to summer? It seems as though the season just started, and its bounty had only yesterday begun to fill the supermarket shelves. Just like that, it’s all done for another year. Fortunately, even the Northeast still has plenty of farm fresh corn to offer – a cornucopia, you might even say – and we’ll take up our supermarket’s “12 corn cobs for $4!” offer as long as we can. This aren’t the tiny, young cobs from July that we could almost eat raw – at the end of the season, while corn is still pretty tasty, but not really at its peak, it’s a fantastic ingredient in a soup or stew. Nettle, Leek and Potato Soup

Spring is here, and one of the first areas of the garden to poke up green leaves is the stinging nettle patch. If you can avoid the sting, the nettle is one of the healthiest, most delicious perennials that’s super-easy to propagate — and is the superstar of this soup, made with leeks, potatoes, and the green, green nettle. 

There’s no getting around the fact that the stinging nettle is the unloved weed, the lurking Triffid, the snarling Caliban, if you will, of the British landscape. If you thought otherwise, let me show you the plant in its natural habitat:

But despite its rather unprepossessing appearance, its urban ubiquity, and the unpleasant electric-shock feeling of walking into one, nettles are one of the most nutritious and tasty spring greens you can cook with. Last spring we made a nettle risotto with garlic and taleggio, and this year we’re combining nettles with leeks and potatoes to create a rich, green soup, sprinkled with brown butter – garlic croutons and wild violets from the garden.

Tomato Soup and Cheese Toast

Our weeknight-friendly Creamy Tomato Soup is a favorite of kids and adults alike. Canned and sun-dried tomatoes give it loads of flavor, along with fresh herbs and a creamy swirl of Mascarpone cheese. Instead of plain old grilled cheese, we’ve paired it with the most delicious and buttery Roasted Garlic Cheesy Toast.

There’s something to be said for flavor combinations that kids love. Peanut butter and Jelly? Awesome. Tater Tots and ketchup? Move over Timmy, we want some too. Tomato soup and grilled cheese? Happy dance. And while, yes – you can heat up a can of Campbell’s and grill up some white bread with a slice of American cheese in the middle – for most adults it’s going to taste a little blah – somehow both too sweet, too salty and still bland. And while we’re not sticklers or anything, we try to keep our processed food intake to a minimum, especially when cooking a recipe like this from scratch is easy and gives you wildly better-tasting results, to boot.
