Thai Basil Gimlet

We’re very fond of our herb garden. A few years ago, we built a step stand on the back deck, and this holds enough aromatic greenery to pinch for the kitchen all summer long. Having herbs so close to hand means that it’s easy to get inspiration for a food or drink recipe. Herb pots are easy to set up, don’t require any digging, and can be positioned wherever you have a sunny spot. A few years ago, in our garden-less apartment in Brooklyn, we’d sneak herb pots out onto the fire escape in defiance of the landlady. When Emily lived in an industrial loft building, the roof was always the sunniest location and where herbs thrived. The pride of our raised bed garden is always late-summer tomatoes, but there’s a hero of the herb garden that brings us delight from early summer onwards. To paraphrase T S Eliot, we can measure out our summer in basil leaves. 

This is about a third of the herbs we’re growing, though the shiso (bottom left) is trying to take over the world.

Our Stuffing with Apples, Sausage and Fennel is so good, we make it for (our friends and family demand it for) Thanksgiving every year. Like a savory bread pudding, it’s moist and flavorful in the middle, with crispy brown sides and top. The flavor combination of rich breakfast sausages, sweet apples and fennel make this the Thanksgiving side dish we just can’t do without. 

Yes, we call this Thanksgiving “stuffing”, but several years ago we realized that actually stuffing a turkey is a losing battle. First, it causes the turkey to take longer to cook. This means the white meat will definitely dry out before the stuffing reaches a safe temperature. Not only that, but all the delicious drippings that we want to go into the gravy get soaked up by the bread (which just gets soggy). But don’t fret, you lovely Nerdlings, we’ll show you how to make stuffing so moist and flavor-packed, it doesn’t even need gravy. (You should drizzle gravy on the stuffing anyway because gravy is delicious and you deserve it.)

After a long, hard Northeast winter, nothing makes me happier than looking out on the deck and seeing row upon row of fresh herbs, sitting up in their little pots all bright and perky, like, “what? I was always here.” No, Rosemary, you weren’t. And I know that for a fact because I paid a freaking fortune for a few measly sprigs in January since I just couldn’t bear to use the dry, desiccated jar of rosemary-scented dust that languishes on my spice rack through the winter. 

Even though spring is yet young, the herb garden still feels like a cornucopia. Chives! Mint! Cilantro!  Sure it’s still too cold for the basil, but don’t be greedy, it will be here soon. Anxious for a recipe that uses this green bounty, we decided on a Black Rice Salad which, along with crisp red cabbage, sweet golden raisins and crunchy peanuts, uses a full cup of fresh herbs. We went with cilantro and mint (because that’s what we have) but basil, when it’s fresh, would be fantastic too, especially spicy Thai basil if you’re growing it or can find it in the store.

Easy Creamed Corn with Basil

Easy Creamed Corn with Basil is a summer staple in our house. These sweet kernels are just barely simmered in a sauce made from silky mascarpone cheese, a little half and half and not much else. Add a sprinkle of fragrant basil and you’ve got a simple, supremely summery side!

When summer corn is at its sweetest, it doesn’t take much to make it shine. A quick steam, a sprinkle of flaky sea salt, maybe a slick of good cultured butter is all that’s needed, and often not even that. But towards the end of the season our taste buds (and our teeth) need a break from gnawing kernels straight from the cob. That’s when we make this Easy Creamed Corn with Basil. Almost as quick as a simple steam, this method brings out the best in the corn, keeping the kernels crunchy, but bathing them in a silky, creamy sauce that’s the work of minutes.

Crispy, crunchy oven-fried chicken tenders might look like kid food, but these are packed with enough flavor to keep the grown ups just as happy. We serve them with a garlicky, lemony, herb-packed yogurt dip. 

If someone took a quick glance at our blog, they might get the impression that we’re fancy people. We are not. Prime example: Matt’s desert island dish is probably butterscotch pudding (the kind made from a packet, mind you). And mine is probably tater tots. Yes, frozen potato nuggets, baked on a tray. See? Not fancy. 

Yes, we like to cook up some nice grub but it’s mostly simple stuff, just made (hopefully) with good ingredients and a little technique. Same goes for this recipe, our crispy, crunchy baked oven-fried chicken tenders.

This Phyllo Torte with Chicken (or Ham), Ricotta and Swiss Chard has a crispy, flaky, buttery crust filled with all our favorite Spring flavors. It looks like a showstopper, but it’s easy as pie. 

We’ve been having topsy-turvy weather here in the Hudson Valley over the last couple of months. We had an late Winter blizzard that dropped almost 3 feet (!) of snow on us, followed by a week in the 70s, followed by a month of cold dreariness, and then yesterday it got up to 89ºF. Even our poor little chickens are like “WTF, people?” (You haven’t seen side-eye until you’ve seen chicken side-eye. They are not shy about squawking their displeasure right into your face).
