There comes a time for most people when they experience a food in a totally different way from how they’ve been used to. For us, that revelation was stone-ground polenta. For the longest time, we’d stuck to the packaged tubes of pre-cooked polenta that you slice up and grill. Now, there’s nothing wrong with them, and we still cook with that variety from time to time, but can we tell you, the first time we had really good, slow-cooked traditional polenta, it was like night and day.

Of course we, along with the rest of the world, have been stuck inside our home so we’ve been craving something warm and comforting even more than usual. We give our version a twist with the addition of white (shiro) miso, which is one of our all-time favorite ingredients and something we have permanently in stock. Miso has a deeply nutty, slightly fermented saltiness and a hint of sweetness that is just delicious, especially when paired with something tart, like lemon. Along with the (also nutty) tahini, it adds a layer of flavor that hits just the right note.

Ultimate English Toffee

We couldn’t let Christmas come and go without reposting this. It’s one of our earliest posts, but one of our very favorite recipes and something we make every single year for family parties. It just may be the toffee of your (my) dreams and while I may be indulging in a tiny bit of hyperbole, once you try it, you’ll know that I might be dramatic, but I am not a liar. In the past, I proclaimed this Salted Caramel Sauce the best thing ever and I stand by that. It’s just that there’s room on the pedestal for that sauce’s cousin from across the pond, real English toffee.  

FACT: This toffee is so good, it caused this face from Loki, this one from Arya, and best of all, this one from Matt. Okay, nerd business done.

While other toffee types are available, this toffee is hard and brittle, and thin enough that you won’t need a tiny hammer to break it up.

Why This Toffee Works

I’ve made a lot of toffee recipes over the years and this one is by far the tastiest and the easiest. It not only has a really nice balance of sweet and salty but a clever secret. The addition of a very small amount of corn syrup pretty much eliminates the danger of the sugar crystallizing (this has happened to us a few times, and can be a real bummer). This problem is caused when the sugar crystals start a chain reaction of crystallization (the process of sugar particles clinging together) which makes the mixture grainy. Once it happens there’s not much you can do about it, but there are a few things that will help prevent it from starting.

In this case the “tumbleweed” is Arya, our rescue dog who, for a pup who lived her first year on the streets of West Virginia, is hilariously particular about the range of temperatures she finds acceptable. 70º – 75ºF is fine, but a few degrees in either direction and get ready for dramatic sighs and woeful glances.

A quick steam, a sprinkle of flaky sea salt, maybe a slick of good cultured butter is all that’s needed, and often not even that. But towards the end of the season our taste buds (and our teeth) need a break from gnawing kernels straight from the cob. That’s when we make this Easy Creamed Corn with Basil. Almost as quick as a simple steam, this method brings out the best in the corn, keeping the kernels crunchy, but bathing them in a silky, creamy sauce that’s the work of minutes.

Kimchi Pimento Cheese

Pimento cheese doesn’t have to be eaten in a sandwich – and neither does it need to contain pimento. Say what?! Before you flay us alive for our heresy, let us hurriedly explain that we replaced the pickled pepper with fermented home-made kimchi. And we, frankly, think it’s even better. 

Pimento cheese, the iconic spread of the American south, turns out not to be very southern at all – at least in terms of its origins. It’s so associated with the south that it’s hard to imagine the spread (a mix of cheddar cheese, cream cheese, mayonnaise and diced red pimentos) as coming from anywhere else, but our friends at Serious Eats did a little digging and discovered that pimento cheese actually got its start up north, in New York, as a way to market the burgeoning production of cream cheese.

In the 1870s, New York farmers started making a soft, unripened cheese, similar to Neufchâtel, that eventually evolved into cream cheese. Around the same time, Spain started exporting canned red peppers — or “pimiento” — to the United States. Eventually a combination of the cheese, peppers and mayonnaise became the spread we know today and like any good origin story, the lore soon outgrew its humble beginnings and pimento cheese became a staple of church picnics and neighborhood potlucks and fancy restaurants all over the southern U.S.

While most loved between two slices of bread, the cheese spread is versatile enough to lend itself to a variety of uses – as a dip, as a topping (think cheeseburgers, or our favorite, patty melts), and even as a stuffing for meats like chicken breasts, or pork chops.

Silky smooth and packed with flavor, Tahini Sauce with Lemon and Garlic is absolutely essential on falafel but delicious on so much else. It’s bright and tangy and as creamy as sauce with no cream (or any dairy) can be. 

Pretty much now considered an essential recipe, our Tahini Sauce is based on the version in Michael Solomonov’s wonderful cookbook, Zahav. Don’t be alarmed by the whole head of garlic used in the sauce; like some kind of magic trick, blending the whole, unpeeled cloves with lemon juice neutralizes the formation of allicin, which is the chemical responsible for garlic’s harsher flavors. The resulting sauce is delicately garlicky, with almost no pungency.

In 1994, I had just graduated college and was living in Williamsburg, Brooklyn. During the day I worked my first job in the film industry. I was interning in the editing room of a film called Surviving the Game (starring Rutger Hauer, F. Murray Abraham, Gary Busey and Ice T. Yes, you read that list correctly.) At night and on the weekends, when I wasn’t bartending, I was attempting to make a living as a custom hand-bound book artist. This is the long way of saying I was ridiculously flat-out broke.

My friend, Adriana

My partner in book-binding, loft-living and cooking on a budget was my best friend from college, a beautiful and talented artist from Colombia named Adriana, who sadly passed away in 2004. She and I spent countless hours in her loft (a former fish-canning factory which, worryingly, always smelled a little like anchovies when it rained). We laughed at a million stupid jokes, bound hundreds of books, and watched many episodes of the X-Files. We also ate a gazillion Colombian-style arepas, slathered with butter and salt (or sharp cheese and guava paste, Adriana’s favorite).

Not to get too emo on you but looking back, I realize what a formative and precious time those years were. It taught me that I can make anything, including furniture. I learned that film editing is basically magic. And most importantly, I learned that when you cook with people, what you learn from them stays with you forever, so they’re with you forever.

Whenever I miss her I make arepas. I make arepas often.

The classic combination of spicy sausage, creamy white cannellini beans and bright escarole has never been so satisfying. We go heavy on the garlic and herbs, add more vegetables, and give it a hearty, creamy texture by mashing some of the beans and adding a little cream cheese. 

Every year on the blog about this time we complain about the weather. It’s so cold right now, we’re watching the Hardhome episode of Game of Thrones, where Jon Snow and his pals are as far North as they’ve ever been, and they’re fighting through a vicious blizzard and the cold is literally making people’s hands drop off, and we’re thinking “mmm, that looks like a toasty vacation spot”.

This year, the weather gods have outdone themselves (it’s -16ºF / -27ºC with the wind chill. That’s an incomprehensible amount of cold.). So instead of shaking our fists at the sky and risking instant frostbite, we fight back by making the coziest, heartiest, most fortifying soup we can imagine.

Shrimp and grits is a Southern standard which we in the Northeast are delighted to adopt. We tossed crispy shrimp with spicy, buttery buffalo sauce, and cooked up corn grits with plenty of salty, crumbly blue cheese. A match made in heaven! (Well, South Carolina and New York.)

We’ll admit it: we don’t get out of New York State very often. Our combined day jobs and blogging responsibilities have us tied down to the homestead most of the year, and, let’s face it, NY is so damned big, and we’re barely halfway up the Hudson, so it takes half a day’s drive to get anywhere that’s not here. We do jaunt across to Connecticut every couple of months to do a warehouse shop run and marvel at their exotic blue highway signs before coming straight back, but that’s about it. A couple of winters ago, we made a concerted effort to break free of our routine, and almost at random decided to drive down to Maryland. It was there that we fell in love with (a non-traditional version of) shrimp and grits.

Nothing was immune to the standard preparation (boiled beyond all recognition). I couldn’t again face parsnips or rutabaga (what we called “swede” which was served up in tiny cubes from a can) until well into my 30s. And then, of course, there was the poor old cauliflower. It’s such a healthy food – packed with nutrients and vitamins, but if you’re just going to boil it to death, what’s the point?

When we want the flavors of bulgogi and the convenient outdoor grilling method of a burger, there’s an easy solution: combine them. By sticking with the tried-and-tested burger, glazing it with a spicy soy-ginger-garlic-gochujung sauce, and stacking it with kimchi mayo and pickled daikon radish, you can keep the best of both worlds without offending culinary purists.

We’ve all experienced what I like to call “fusion fails”. Two culinary concepts which, taken individually, are perfectly respectable, but in combination create a whole that is … let’s just say less than the sum of its parts. For example, I love fruit, I love cheese, but bits of fruit IN cheese? No thank you. I love bacon, and I’m a fan of vodka, but bacon-flavored vodka (yes, this exists)? I’ll pass. The most successful fusions take two examples which aren’t so far separated on the food spectrum that you have to take a leap of faith that the result is even edible, let alone worth the trouble of combining them. Croissants and doughnuts can at least both be found on the bakery shelf, and thus we have the cronut. And bulgogi, the Korean staple, uses thin strips of beef that are marinated and seared, so why not apply those flavors to a perfectly grilled burger? To be honest, making up names like “cronut” and “flagel” isn’t our forte, so we’re simply calling this the “bulgogi burger”. If you’re as nerdy as we are, you might like to call this a “crossover episode” – where stars from two different shows team up to make a delicious dinner! (This is why we don’t write TV shows.)

For an almost effortless way to a more interesting cheese platter, marinate fresh goat cheese in olive oil with herbs and spices. Use it as a topping for crackers, a spread for sandwiches, or crumbled into salads.

Tangy and creamy, fresh goat cheese (also known as chèvre) is delicious right out of the package, but that doesn’t mean you shouldn’t get creative with it. Marinating it in extra-virgin olive oil with flavorings like garlic, thyme, fennel seed, and lemon peel infuses it with flavor. It can be used the way a regular goat cheese would: crumbled in salads, spread on a warm baguette as part of a sandwich, or, our favorite, served simply with crackers.

If you like mustard, you seriously have to try making your own. It’s so much better than the jarred kind and it couldn’t be easier. Our Homemade Maple Mustard is a little sweet, a little spicy and tastes incredibly fresh. 

Yeah, I get it. The idea of homemade mustard is just a little bit precious. Bordering on the dreaded ‘artisanal’ label that plagues lovers of real, unpretentious food … but hear me out because this stuff is awesome and I really, really want you to make it.

The truth is, I think most things taste better homemade. Sure, jarred mustard can be good and I use it most of the time but for something really special (like a crazy-beautiful charcuterie board or a holiday ham), why not serve it with a condiment as special as the main dish? We knew we wanted to make Red Onion Jam with Wine, Honey and Thyme but we also wanted something spicy that would be good with charcuterie. And besides, I think there’s something cool and homesteader-ey about making something so inherently useful.

Every now and again with this blog, we create a recipe so unrepentantly weird that it seems a shame not to share it with the world. This week, we’d like to introduce to you a dish based on a gorse* pannacotta that we encountered a few years ago at one of our favorite restaurants, Llys Meddig in Newport, Wales.

Our vacation snapshot of the original dessert is too low-quality to share with you – suffice it to say that it was a delight and well worth trying to recreate. Pannacotta is pretty much a three-ingredient recipe (cream, sugar, gelatin) in its simplest form; all we would need, apparently, is some gorse.

So if you ever need to make a dessert suitable for a Murder Mystery night, we’ve got you covered.

And, if we can use the Mediterranean heroes of the summer vegetable garden—tomatoes and basil—so much the better. Not only do tomatoes and basil taste great together, they also have a symbiotic relationship in the garden; companion gardening with the two plants in proximity improves their resistance to pests.

We spiced up our one-pot mussels with Thai curry sauce to make this red curry mussels recipe. It’s cheap, it’s delicious, and best of all, it’s ready in 20 minutes!

Mussels are perhaps not everyone’s first choice for a quick weeknight supper, but that assessment deserves to be challenged. They cook quickly and excel in simple recipes like this one. Most people have probably made a variation on moules à la provençale (mussels in a garlic-tomato sauce) or moules marinières (with white wine and butter). Today we’re using a Thai-style red curry paste and a quick vegetable sauté to create a bold, spicy broth that pairs perfectly with briny mussels. Add some easy rice stick noodles and you’ve got a complete meal on your hands in 20 minutes or less.

Being an American, the phrase ‘cheeky Nandos’ means almost nothing to me but for some inexplicable reason, it became stuck in my head the other day. I asked Matt (a Brit) what it meant and all he did was laugh, jump around and scream “Cheeky Nandos! Cheeky Nandos!” for about an hour until I was forced to distract him with a shiny Doctor Who marathon. Not helpful.

In this rare case, even the internet failed me. When I googled “What is cheeky nandos. Help, confused american.,” it suggested this article. This a sample explanation:

you know when you go down town with the lads and you all realize you’re hank marvin’ so you say “lads let’s go Maccers” but your mate Smithy a.k.a. The Bantersaurus Rex has some mula left on his nandos gift card and he’s like “mate let’s a have a cheeky nandos on me” and you go “Smithy my son you’re an absolute ledge” so you go have an extra cheeky nandos with a side order of Top Quality Banter

A little background: Emperor Claudius II (not the stuttering one) had a problem. He was having trouble maintaining a strong… military (not a euphemism, for once). For some reason the men of Rome were reluctant to join an army led by a man whose nickname was ‘Claudius the Cruel’. Go figure.

Claudius presumed it was because of their strong attachment to their wives and families, so he did what any reasonable ruler would do. He banned all marriages and engagements in Rome.

Valentine, hoping his name would one day be synonymous with chalky chocolates and teddy bears holding roses, defied Claudius and continued to perform marriages for young lovers in secret.

That is until he was arrested and beaten to death with clubs. And then his head was cut off.

Ah, nuts! These Sweet and Spicy Candied Peanuts strike the perfect balance of sweet and heat. They’re great for snacking or for adding a special touch to soups or salads. 

I initially made these candied peanuts because I wanted something extra fancy to top our Thai Coconut Curry Butternut Squash Soup. While I love croutons, they didn’t seem quite right for this for some reason. So it needed to be crunchy and salty of course, but also with a little sweetness. And it needed to be savory too, something that wouldn’t get lost in the rich flavor of the soup.

I know, I know. So demanding. Nothing could deliver all those things at once, right? Wrong!

Spicy curry candied nuts do and they’re a cinch to make.

So … from these humble beginnings comes the greatest snack food in the history of pretty much everything. I’m not even kidding. Candied peanuts are unbelievably good.

The crunchy coating has that perfect balance of salty and sweet, and an almost toffee-like flavor from the mix of white and brown sugars that caramelize in the oven. The savory heat comes from a mix of spices, including Madras curry powder, cayenne pepper, cumin and cinnamon. These are not sear-your-tongue spicy, more like a warm heat but you should definitely put your own spin on it.

I’m not sure why but I used to think of risotto as a big complicated project. Somehow I got it in my head that you absolutely must make your own stock and add it a thimbleful at a time and stir and stir and stir and if you stop stirring for even a second, the whole thing turns to garbage.

None of that is true.

While it is true that the better the stock is, the better your risotto will be, there are a lot of ways to impart flavor into the dish using simple, everyday ingredients.

And while I’ve never had great results from simply pouring in all the stock at once, the process is a lot less delicate and precise than you might think.

The rice itself should take less than 20 minutes to go from raw to beautifully creamy and al dente. Even including the time it takes to cook the mushrooms, that’s well within the realm of an easy weeknight dinner.

Chili sweet potatoes are our go-to for a rainy fall weekend – we give you a few meat and meat-free options, but they’re all tasty.

I’m a film editor and several times over the span of my career, I’ve thought about moving from New York City where I was born, to Los Angeles. Many of my friends and colleagues have done it, and most of them love it there.

It’s so beautiful, they say. True, I’ve been and it’s very pretty. There’s a lot more work and for the price of a Brooklyn studio, you can buy a three bedroom house with an avocado tree in the back! All true and, yes, this makes me jealous. And the best part? It’s warm all the time and it never rains! Aaaaaand you’ve lost me. 

For me, one of the great joys of life is feeling the crisp, cool air of Fall. When the weather turns it feels like a shock, every time. Even better if that cool air comes with a blustery rain storm. The type of weather that practically forces you to cook something warm and comforting. To stay home and watch movies or play video games all day. (Nerd note: Matt and I are re-playing “The Last of Us” and, oh my god, it’s so good).

When I heard it was going to turn cold and rainy last weekend, I knew right away what I wanted to make; spicy chili with all sorts of yummy toppings stuffed inside a baked sweet potato.

Shrimp curry is easy to make, and we flavor it with coconut milk and add fresh corn for a summery touch, but you can make this all year round!

While I love hot dogs and hamburgers and all those great American summer favorites, I find that by August I’m actually kind of bored of them. That’s when I crave something completely different, something that will wake my tastebuds right up.

Something like this fiery red shrimp curry, made silky by coconut milk and topped with lots of bright herbs like mint, basil and cilantro. We made it with wild-caught North Carolina white shrimp because they looked amazing at the market but you could easily swap them out for chicken thighs or breasts (cut into large bite-sized chunks), tofu, even chickpeas would be a delicious vegan option.

Sweet corn is in peak season right now and while it lasts I add it to just about everything, but it really does work incredibly well here. When life gives you basil, make basil pesto. It’s the perfect accompaniment to salads, pasta, as a bake-in sauce for chicken and many other dishes. Since we’re cheap, we substituted affordable walnuts for pricey pine nuts. 

We’re finally getting better at this whole “growing stuff” thing. Our first year here we struggled with just a few herbs on the deck. We grew some thyme, a bit of sage, a little rosemary. One scraggly little basil plant that got some sort of fungus and never recovered. Our second year was a little better. The rosemary was bushier, the chives flowered beautifully. Basil seemed happier.

This year, pow! Basil explosion. We’re growing them in large pots in a very sunny spot and they’ve gone absolutely bonkers. It’s like Day of the Triffids out there.

I wanted something a little sweet and tart to go along with our Grilled Steak with Blue Cheese and Chive Compound Butter and as soon as I saw Ina Garten’s recipe for Balsamic Onions, I knew I wanted to do a version of it. I added thyme because I love their flavor with anything roasted, though rosemary would also be great. I also increased the cooking time by quite a bit because I wanted the onions to be quite soft and caramelized, as opposed to still crunchy.

Sometimes the best approach to fresh produce is to treat it lightly in the kitchen, and let its natural flavor shine. This is how we love to eat radishes: a little sea salt, a little sesame oil, and that’s it.

This is a very simple take on the classic combination of radishes and butter. In this case the butter has been replaced with toasted sesame oil which has a wonderful rich nuttiness that pairs beautifully with the crisp radishes. Maldon Salt is my favorite flaky sea salt but you could use fleur de sel or whatever kind you prefer. It’s so simple but it’s incredibly delicious.

Not you’re not crazy, I’ve blogged this recipe before but I’m re-posting it for two reasons; One, I wrote out the recipe in a bit more detail so it’s easier to follow and two, I took much better photos. This is the first time I’ve updated a post for mostly cosmetic reasons but the truth is, this is one of my favorite recipes ever and the original pics were just not doing it justice. Can you tell that I really, really want you to try it? Therefore I present to you, Miso Salmon, Part Deux.

If you’ve never cooked with miso, miso salmon is a really great recipe to start with. While most of us are probably familiar with miso in soup form, it’s also fantastic in all kinds of dishes, from savory to sweet. I use it in salad dressings, I love it drizzled on roasted vegetables (try this same glaze on eggplant, yum).

One of the great aspects of miso is that it keeps for ages in the fridge (seriously, months and months), so you won’t have to go on a miso bender just so you won’t waste it. I mean, you’ll probably go on a miso bender anyway because the stuff is delicious but it won’t be for economic reasons.

This miso salmon recipe is certainly what I use it for most often (and how I love it best). The glaze has a great balance between savory and sweet, and the skin gets wonderfully burnished and crisp. It also literally takes just a few minutes from start to finish, so it’s my absolute favorite weeknight dinner. Quick or not, for me, this is one of the best salmon recipes of all time. I could have it twice a week, happily.

The Most Delicious Ramp Butter

Ramps, a seasonal treat in the Northeast US, are in danger of being over-harvested. Since they are very slow to cultivate and difficult to farm, foraging is still the main way to find them. A wild ramp patch can be quickly overrun and destroyed. The most sustainable way to harvest ramps, if you find them yourself, is to cut only one leaf of each plant, leaving the bulb and second leaf to continue growing. This is least impactful on the soil, the plant, and the colony as a whole. We’ve adapted the recipe below to use only the ramp leaves, and you’ll find ramps in this form from sustainable vendors.


“Ahem,” [Taps mic, looks around nervously]. “It all started around ’98. ’99. It was like they were giving it away, you know? We just thought, ‘hey, these are pretty good!’. We didn’t understand. We didn’t know what would happen.” [Squares shoulders, takes deep breath]. “My name is Emily, and I am addicted to ramps.”

I feel a tiny bit bad about evangelizing a vegetable that can be very hard to find but this was just too good not to share. Making ramp butter, along with pickling, is one of the best ways to preserve ramps so you can enjoy them all year round.

Your basic ramp, Allium tricoccum, is a North American species of wild onion that grow across eastern Canada and the eastern United States. (The European/Asian variety is allium ursinum.) I know that doesn’t sound very exciting but they have a unique oniony-garlicky flavor that, if you like that kind of thing, is really fantastic. They are also notoriously difficult to cultivate and their growing season is very short, so they are a true delicacy. That means crazy people (me), will travel far and wide to find them, so if you’re lucky enough to have them in your region, don’t expect to saunter over to the farmer’s market at noon and expect to find any left (because I got there at 7 and bought them all).

One of the things I love about living in Beacon is that it really feels like a community that is growing and changing in an interesting way. For a long time I felt this way about Brooklyn (where I had lived since the early 1990’s) but as wonderful as Brooklyn is, it’s just too damn expensive now for artists and creative people to do anything but hustle every day to make rent.

I know I’m the bazillionth person to complain about how amazing Brooklyn used to be, but I was incredibly lucky to be one of the crazy, hearty few who lived in East Williamsburg back when it was practically deserted. It was a startling, magical, bizarre, occasionally terrifying place back then, and my roommates and I had absolutely no idea what it would become.

In 1995, if you would have told me that one of the hippest restaurants in NYC was going to open two blocks away from my house, I would have laughed loudly enough to startle the poodle-sized rats that lived in the burned-out minivan abandoned outside my front door. All we knew at the time was that you could rent a 3,000 square foot loft for a few hundred dollars, but you had to install your own toilet and either evict or adopt any animals you found on the premises (I love you Special Ed).

So Beacon may not be able to boast quite the same level of grittiness (thankfully), but it does have a bit of that creatively experimental spirit. Case in point, on a rough-looking corner lot, quite a ways off Main Street, has opened one of the coolest new businesses in town, Barb’s Butchery. Run by a former math professor named Barbara Fisher, it’s exactly the kind of butcher shop you dream would open up in your neighborhood. She sources as much as possible directly from local farms and so far, everything we’ve cooked from there has been fantastic.

I feel like it was only a few weeks ago that every post I wrote seemed to start with me whining and complaining about how cold it was outside. Well, prepare for a déjà vu because it’s frakking freezing again and it’s not even Thanksgiving yet. Oh joy. I know it’s going to warm up a bit again before the semi-permanent winter-long deep freeze hits us but, seriously Nature, can you give a girl a break? See, one of the things about buying a lovely, hundred-year-old house is that it’s goddamn drafty. Luckily I have a dog and two cats that want to be on a lap at all times so that helps. A bit. A teeny, tiny bit. Also, soup.

Speaking of déjà vu (and soup), it was about this same time last year that we posted our recipe for Mashed Butternut Squash With Thyme And Mascarpone, which has become one of the most popular recipes on NwK. I think butternut squash is so popular because it’s not only delicious, it’s also extremely easy to cook well. It has a gorgeous, silky texture (without any of the stringiness you find in a lot of pumpkins and squash) and it also has that beautiful, vibrant color that just screams Fall. It’s the vegetal equivalent of wearing a cable-knit sweater while walking through a pile of brittle, umber leaves. It’s Mr. Autumn Man’s favorite gourd.

This version of shredded brussels sprouts with bacon and pecans might be the perfect Thanksgiving side dish, and can be made ahead to save you T-day stress.

I admit it. I love brussels sprouts. And not just for Thanksgiving, either. I think it’s probably one of the vegetables that Matt and I make most often. Our standard go-to recipe is to split them in half, coat them with olive oil, course salt and pepper and roast them in a very hot oven until they are as brown and crispy as french fries. The only tricky thing about that method is that they have to be served piping hot, right out of the oven or they get a little soggy. Still tasty, but not transcendent.

For me, getting all the side dishes timed perfectly so they’re at the exact perfect temperature by the time the turkey is ready is one of the most stressful parts of Thanksgiving. I feel like the kitchen becomes a ten ring circus, with every burner going on the stovetop and a million things stuffed into the oven. Oy, I’m giving myself agita just thinking about it. That’s why I like to serve at least a couple of dishes that are great at room temperature. These brussles sprouts fit that bill because they are absolutely delicious hot, warm or room temp.

This recipe combines my three favorite things. It’s fast, it’s cheap and it’s delicious. And easy. I know that’s four but I don’t have time for semantics. I’m in a rush here! (I’m not really, but one of the best things about this recipe is that, other than mixing the sauce ingredients together and throwing in the chicken, there’s really not much else to do. That’s why it’s perfect for a weeknight dinner). Bung it in the oven, throw on some rice and by the time you’ve opened a bottle of wine and cycled through your Netflix options, dinner is ready.

We put together two different versions of salsa verde with some tomatillos, avocadoes, garlic and spices, and pretended to be into sports just to hang this article on a game theme! Hint: we are not into sports.

I’ve always envied people that were really into watching sports. I would love to care about something (other than nerdy television shows) enough to paint my face, don a kooky costume and brave the cold, just to prove my commitment and loyalty. To feel the agony of defeat in the hopes of, one day, just maybe, getting to experience the glory of ultimate victory.

But nope. Just don’t give a toss. Matt doesn’t follow sports either (with the exception of the occasional World Cup match, of course).

Roasted beet salad is all about the beets, baby. But you also need spicy greens, creamy ripe cheese and a balanced salad dressing. We show you how.

We all know there are vegetables that many, many people despise. (A Brussels sprout looks around the room nervously and begins to back away. Soon to be followed by a turnip. And then a beet. The beet grabs a stick of celery from a nearby Bloody Mary as it exits.) But the thing is, I’m pretty sure that most people just think they hate these vegetables. And the aversion they experience is not because these maligned veggies are actually gross*, but because they’ve most likely had them prepared incorrectly.

*Except for celery which actually is gross and no amount of jiggery pokery will change that.

Take Brussels sprouts, for example (always at the very top of the “hated vegetable” list). Many people boil them until they are a thoroughly revolting shade of gray and the texture of a moldy sponge. They also think that a little pat of butter will camouflage the criminally sulfurous smell. Then they wonder why there is a child-shaped hole in the wall and little Timmy has run off to join the circus. BUT, take those same sprouts, coat them well in olive oil, salt and pepper and roast them in a very hot oven and they’ll come out as crisp as french fries and just as addictive. And little Timmy can stay in school and become a doctor, or a film editor or some other, equally respectable occupation.

I know, I know, you’re thinking,”Emily, when did you become a member of the Royal Family cos, gurl, you fancy!” (I apologize for making you sound like a 1970’s sit-com character, but it was required for comedy purposes. You should see the wig I’m imagining on you).

Yes, it’s true that these beauties would be perfect alongside a glass of Champagne at an elegant cocktail party. But, truth be told, they’d be equally delightful with a (not terribly expensive) glass of rosé while sitting on the back deck. Guess which way we had them? (If you guessed “directly off the baking tray, standing in the kitchen with a dog and two cats staring at us”, you would be correct).

As fancy as they look, these are incredibly easy to make. On the preparing-for-a-party difficulty scale, they fall slightly above “pour potato chips into bowl” and well below “make homemade dip”. The hardest part is finding fresh figs, which isn’t very hard when they’re in season. If your figs are very ripe, you don’t even really need to roast them (but I find the combination of a warm, jammy fig, oozy sharp cheese, and salty ham to be irresistible).

If you’re making them for a party. you could prep them up to a day ahead and just roast them a few minutes before you want to serve them.

Ramps, a seasonal treat in the Northeast US, are in danger of being over-harvested. Since they are very slow to cultivate and difficult to farm, foraging is still the main way to find them. A wild ramp patch can be quickly overrun and destroyed. The most sustainable way to harvest ramps, if you find them yourself, is to cut only one leaf of each plant, leaving the bulb and second leaf to continue growing. This is least impactful on the soil, the plant, and the colony as a whole. You’ll find ramps in this form from sustainable vendors. If you have your own private ramp patch with bounty to spare, feel free to use the bulbs, as we did in this recipe.


Yeah, yeah. I know ramp season is over but I made these a while ago and they were so good I decided to blog them anyway. When it comes to ramps, it’s really the green leaves that are incredibly perishable so every once in a while, you can find just the bulbs for sale long after you stop finding the leaves. But what to do with them?

You may have guessed that I’m fond of making pickles. What’s that? Oh, that’s just Matt running in to the room holding a jar of brined pencils, screaming “Obsessed! You’re obsessed”.  Fine. Yes. I’ll admit it. I love pickled red onions, radishes, cucumbers, even grapes.

So it should come as no surprise that when I found the last batch of ramp bulbs hidden away in a overlooked corner of our local market, I immediately decided to preserve them in a delicious, sweet/tart brine.

You can use these pickled ramps anywhere you would use pickled onions (on sandwiches, tacos, bean dishes, etc). I also really love them sliced up in this Orzo Salad with Zucchini, Tomatoes, Olives and Feta.

SCENE 1. INTERIOR. DAYIt’s brutally hot outside. Matt and Emily (plus a dog, two cats and five chickens) are sprawled all over the living room, fanning themselves.

MATT: It’ll be July 4th soon! We should make something appropriately red, white, and blue, like you Americans (sniff)… enjoy.

EMILY: First, (waving citizenship papers) that’s *we* Americans, buddy, and second, what do we have in the pantry that’s red and blue?

MATT: I WILL FIND OUT. (Matt disappears into the pantry for several hours. Cue special effect of the hands of a wall clock spinning forward. Eventually he re-appears with a can of tomatoes and a ball of blue string.)

EMILY(Long, long pause). What other colors do we have?

MATT(Chews on the ball of blue string, thoughtfully, and looks out of window at the deck, where a Triffid-like mass of herbs threatens to destroy the house.) Green. Lots and lots of green.

EMILY: THAT GIVES ME AN IDEA. (Grabs sunglasses and a large pair of scissors, heads outside.) Get ready to be…(lowers sunglasses enough to peer over them)…REFRESHED.

Oh hello, I didn’t see you there.  Sorry, I was just recording some crowd noises. Now, where was I? Oh, yes, rhubarb. Lovely vegetable, er, fruit, er, whatever it is (it’s a vegetable).

We’re not yet growing rhubarb ourselves, but enough of our local farms seem to be doing so now that it’s relatively cheap and abundant. When we lived in the city, buying rhubarb always seemed to be an “either/or” proposition: we could either buy rhubarb, or we could pay our rent. We really had to have a plan for it ahead of time. That’s not the case now, and we’ll gladly buy it when it looks good, and then figure out what to do with it afterwards.

Our first batch this summer went into a crumble (eaten too fast to blog). The next batch became cocktails. Now we’re on to batch number three. We’ve already got a great recipe for lemony lemon curd, and one day Emily walked into the kitchen, eyed the pile of rhubarb, and said, “What do you think of making rhubarb lemon curd? Is that even a thing?”

It sounded pretty good, and with a little research we discovered that yes, it was a thing, but the various recipes floating around the internet seemed deficient in one way or another. Many were extremely complicated, requiring a double-boiler and an excessive number of steps. Others were insufficiently rhubarby, and if there’s one thing I require from a rhubarb recipe, it’s that it at least has the decency to taste of rhubarb. So we decided to nerd-up our own version  (translation: simplify and improve flavor).

It’s a warm, early summer evening and after days of torrential, flooding rains, the sky finally clears and you can see a million stars. You can smell the damp earth and the new leaves on the trees. You can hear the frogs that have just woken up from their winter-long sleep. You pull up to the lovely, perfect little restaurant where you’ve reserved a table, excited because you’ve heard great things about it and also because it’s been a long, hard winter and you haven’t gone out in what feels like forever. You hold your husband’s hand as you walk to the entryway, listening to a stream gurgling in the distance that you can’t see because it’s the country and it’s dark. You walk in and the place is adorable and there’s a seasonal cocktail menu written on the chalkboard above the bar and then they seat you at a table RIGHT NEXT TO PETER FRIGGIN DINKLAGE.

Yup. In the car on the way to the restaurant, Matt and I talked about how there was no Game of Thrones on Sunday because of Memorial Day and then they seat us right next to Tyrion Lannister himself. How tempted was I to say the waitress “Bring us bread, two of those little fish, and some bacon burned black?”  Very. But I restrained myself. Just barely.

Oh, and they also had grilled ramps. So, yeah. It was a good night.

The missus has been out sick this week, so I’ve taken over blog duties. Last weekend I expanded on my bread baking with a really good multigrain recipe from Martha Stewart (to be blogged later) that involved three kinds of flour, two kinds of grain, and four kinds of seeds, and after all that I had to have a good lie down in a darkened room.

For this post, conversely, I decided to try something else I’d never done but keep it as simple as possible. Yogurt is something that we always try to have in stock in the fridge – not only is it a fantastic breakfast option, especially with some toasted nuts or seeds, maple syrup or honey, or (when in season) fresh berries, but it’s a great stand-by for a host of other recipes, such as marinades, dips and saucy dishes such as curries. We often use it in place of sour cream, like in this Lemon Basil Sauce.

We almost always buy the Greek varieties of plain yogurt, which are strained and therefore thicker than the “regular” variety. People have started wars over their preferred brand of Greek yogurt – to avoid bloodshed, I won’t reveal the specific brand we prefer, other to say that it’s the one that’s not Chobani.

Home-made Greek yogurt is so much more delicious than even the best store-bought kind, and is also much more affordable. The best part is that you get to control the quality of the milk that goes into it and we found that even using the best organic, grass-fed, free-range, hormone-free milk was cheaper than buying it already made.

Butternut Squash Polenta

Somehow polenta has gotten the reputation of being difficult to cook. That you have to stand over it and stir and stir, and if you stop for even one moment, your lovely silky cornmeal will turn into a brick of yellow concrete. To that I say “pshaw!” [Matt says: I don’t know where she gets these expressions, I really don’t.]

The truth is, make sure the liquid (which could be water, milk, broth or a combination) is hot, and whisk the polenta in slowly, making sure it doesn’t clump. Once it’s all mixed in, you can cover the pot and just stir it every ten minutes or so, and it will be perfect and ready to serve in 30 to 40 minutes.

This recipe, which was inspired by Melissa Clark, has grated butternut squash in it, which gives it a lovely vegetal sweetness. We used it to make Polenta With Sausage and Onion, but it would be great for any dish that you would have polenta with. I’ve changed the recipe slightly because I like using coarse rather than finely ground polenta. I also added a little milk to the liquid, increased the amount of squash and decreased the butter.

Don’t use quick-cooking polenta for this. Not just because it doesn’t taste the same, but it also won’t give the squash the time it needs to cook.

Nerd Tips:
  • Avoid de-germinated cornmeal (the germ has been removed to increase its shelf life), as it’s not a whole grain. We really love Wild Hive Farm‘s Polenta but use any long-cooking brand you like.
  • Traditional polenta is made with water but you could substitute a portion with broth or milk if you want a richer flavor.
  • We sometimes add mascarpone which makes it especially creamy and rich.
  • Leftover Polenta will solidify into the shape of the container in which you store it. You can slice or cube it and then roast, grill, or pan-fry it. To make it creamy again, warm it slowly over low heat with a little broth, milk, or water, and stir. It won’t be quite as creamy as it was originally, but it should still be pourable.

This is the topping that we made to go on the Butternut Squash Polenta. It’s one of those really satisfying, but incredibly simple recipes that barely takes any prep. Once you’ve got the polenta going, you can relax, have a little wine (since you’ve already opened it to make the sauce so, why not?), do a little chopping, and you’re ready to cook.

There aren’t a lot of ingredients in this so use the best quality sausage you can get. It works well with pork but I really love using turkey sausage from DiPaola‘s. You can get it at several farmers’ markets around New York City but sadly, we have’t seen it around here yet.

A great vegetarian option would be to use cannellini beans. Rinse them well and sauté them with a little olive oil, garlic, rosemary and chile flakes. 

This was adapted from Melissa Clark’s version. I wanted a bit of a sauce to go with it so I added the wine and mustard. The result is a delicious, savory, quick and easy dinner.

Guys, I’m seriously worried that I might actually be living in a Portlandia sketch. Sometimes I watch it, and I laugh and laugh and then look around nervously to see if anyone is giving me the “um, that’s you” side-eye. I think it was the Battlestar Galactica episode that hit a little too close to home.

Nerd aside: some of you may remember my little black cat, Special Ed. Oh how I loved that boy. So Special Ed, being much adored, had about a hundred nicknames (mostly having to do with the fact that he was a skinny, scrawny, wee little gentleman). So during the height of my BSG obsession,  his name became “Edward James ALMOST” (another fave was “Roger PALTRY”). Still makes me laugh.

If you haven’t seen Portlandia, you’re probably wondering what the bleedin’ hell I’m on about, but one of their sketches is about people who pickle everything (a dropped ice cream cone, a used band-aid, a broken high-heel). Well, stop laughing immediately because pickles are delicious!

These pickled radishes are my go-to if I’m making tacos, quesadillas, or really any kind of  sandwich. They are so quick and easy and are just the perfect thing to perk up anything slow-roasted or long-simmered. Best of all, they’re ready in under an hour and last for weeks.

We aren’t ardent picklers, but we do have two favorites: quick-pickled red onions, and these tangy babies. You can also add herbs (I like thyme, bay leaf and tarragon best), chili flakes or whole dried chilies for spice.  I had a big tin of pink peppercorns that I picked up from Sahadi’s last time I was there so I added them as well.

Potato, Spinach & Cheese FrittataYou know those times when you look in the fridge and think, “meh”. You might have a little bit of this and a little leftover that but seemingly not enough of any one thing to actually make something? Well, that’s me about 75% of the time.

While I definitely get inspired and enjoy the process of shopping and cooking (and photographing and blogging), there are many more days when I’m just really busy and can’t even think about what to make for dinner until I’m fifteen minutes past being really bloody hungry.

That’s when I like to make a fritatta. Seriously, you can pretty much throw anything in it and it will work. (Edible, anything edible). Have a potato or two? Great, chop it up! A bag (or frozen box) of spinach? That’ll work. Weird little bits of several kinds of cheeses? Why not. No one’s looking. As we say in Brooklyn, “do you”. (I’m so, so sorry).

The great thing about a fritatta is that as long as you have enough eggs to bind it all together, pretty much anything is going to work. Sure, you have to think a bit about what flavors go together. That really stinky, pungent bleu cheese may not work so well with, say, shrimp but would be delicious with bacon and onion (and shrimp would be fantastic with corn and scallions).  Just think about what you have available, what tastes good together and don’t overthink it.

Roasted sunchokes (also called Jerusalem Artichokes) make a fantastic side dish. They’re creamy on the inside with crispy edges and a mild, nutty flavor. They also happen to be packed with vitamins.

A couple of weeks ago, Matt’s sister Hayli got us tickets to see Asaf Avidan at Irving Plaza (quick aside: along with The Ritz and CBGB, Irving Plaza was the place to see hardcore, punk and ska bands when I was in high school. To this day, it still feels wrong to be in there without a mohawk and zebra-print creepers on.)

Anyhoozle, the show was great fun (thanks Hayli!) and since we stayed around Union Square, we got to walk around the Greenmarket before we headed back on the train. (I love living in Beacon, but I do miss that damn market. Seriously, there is nothing else like it). Since we were wandering, we didn’t really want to carry loads of stuff but I just couldn’t resist picking up some sunchokes, which are in season right now.

Roasted Sunchokes (Jerusalem Artichokes)Now you may be saying to yourself “Hmm, that looks suspiciously like the grizzled, terrifying hunk of old ginger I found hiding behind my refrigerator when I moved last year.” And it’s true that these aren’t the most attractive vegetable in Earth’s garden of delights but we wouldn’t let a trivial thing like that stop us from enjoying something so delicious, would we? Good answer.

Sunchokes are also known as Jerusalem Artichokes for some reason (they are neither from Jerusalem, nor are they related to artichokes. Go figure, but they are part of the sunflower family so that at least makes some sort of sense.) Whatever you like to call them, they have a lovely nutty flavor which some people say reminds them of water chestnuts.

Recently I had one of those nights when I came home late and exhausted and all I wanted to do was flop down on the couch and watch something fun on TV (current obsessions: House of Cards, True Detective, Ripper Street, The Americans and don’t even call me on Sunday nights once Game of Thrones is back BECAUSE I WILL NOT ANSWER THE PHONE).

Those are the nights when I want to cook something fast and easy, and I don’t want to have to make a special trip to the store to get ingredients. I looked in the pantry and thought “Yes! You can do this, Clifton. Find something in there to make that doesn’t suck!” Well, I’ll tell you this. A warm bowl of homemade classic tomato soup does not suck.

Until tomato season comes round again (it’s hard to remember a time when the yard wasn’t basically permafrost), big cans of good tomatoes are a perfect pantry standby. You can make this classic tomato soup with either crushed or whole plum tomatoes, if you don’t mind crushing them with your hands. Some of you might quite enjoy doing that, I don’t know, that’s your business. Either way, you will want a stick blender to finish the job.

NOTE: If you’re feeling extra-fancy, make a little grilled cheese sandwich to go alongside your masterpiece. I, of course, was far too lazy even for that and just spread some goat cheese on a cracker and sprinkled some black pepper and scallions over it. Oh,  and some chopped radishes on the side because they’re also red.

Blah blah, winter. Blah blah snow. Blah blah thiswinterismakingmeinsane. Okay, obligatory whining done. Whew, I actually feel better.

Rice! (I love a good non-sequitor). Is there a a container of leftover rice in your refrigerator right now? If so, you are in luck, my friend. Why, you ask? Because your mission (a delicious, quick and easy breakfast) should you choose to accept it, involves that rice, some garlic and an egg.

Basically, this is a garlic fried rice recipe from the Sundays at Moosewood Restaurant cookbook, that I used to make all the time. I’m pretty sure the recipe was actually called the Philippine Breakfast and it’s so simple, I didn’t even need to look it up to remember how make it again.

Don’t be put off by the garlic. It gets lovely and nutty when cooked this way. Not pungent at all.  I like to serve it with a few slices of avocado, a lime wedge and a sprinkle of Maldon salt. Matt loves it with a squirt of sriracha.

Nerd Tips:
  • Be careful not to burn the garlic. Burned garlic is horrifying and if you really scorch it you should really throw it out, clean the pan and give it another go.
  • Garlic fried rice works with pretty much any kind of rice (except wild rice which isn’t really rice at all).
  • If you like things extra-spicy, try using a habanero pepper, but don’t sue me if you burn your bits and pieces off.
  • The pepper vinegar gets better and better as it sits, so make extra and store it in the fridge for next time.

Okay, as those of you who live on the east coast of the U.S. know, winter has decided to be extremely, um… generous with us lately. In fact, we are pretty much being bent over it’s knee and spanked like a naughty toddler. We still have a foot of snow on the ground and there’s another snowstorm coming tonight. Yay? (I figure if I pretend to be cool/whatever about it as opposed to horrified, winter will get bored and GO AWAY).

WINTER: Warm weather is life’s great lie! Once you accept your icy fate, this frozen hell-scape will welcome you and you will know peace!
EMILY: [Chomps on a gingery noodle] Okay.
WINTER: Is that all you have to say? No begging? No mewling?
EMILY: [Goes for seconds] Nope.
WINTER: Well, that’s disappointing. [Makes a small child slip and drop his hot chocolate]. Ah, better.

Nerd warning: Want to see a picture of  Matt trying to get to the grocery store? Winter is still coming, it seems. Bloody hell.

No joke, for the first time in my life I had to drive on a highway through a blizzard and it was not fun (remember, this New York City girl just got her driver’s license a year ago). Matt practically had to pry my hands off the steering wheel when we got home because I was gripping it so tightly.

Luckily there are some dishes that work well regardless of the season, and this is one of them. I would happily make this on a warm summer night (remember those?), or on a freezing cold one. It was inspired (again) by a Melissa Clark recipe, though I changed the ratios a bit (more bok choy, added hoisin and sriracha). It’s got a great kick from the ginger and chili, and you should feel free to make it as spicy as you like.

One of the few benefits of living in an area where terms like “polar vortex” and “snow-mageddon” are bandied about is that you have the right, nay, the duty, to pull out the crockpot or dutch oven and put something yummy in it.

(Nerdy Game of Thrones warning ahead) Seriously, it’s so cold right now, all I want to do is curl up by my squid-themed fireplace, grab my adorable direwolf puppy, and eat something delicious.

Unfortunately I don’t have a fireplace, squid-themed or regular, and my direwolf hates the cold even more than I do. But I can definitely manage the delicious part.

Short ribs are great because they’re not terribly expensive, taste amazing and are incredibly easy. The only things you need to remember are to use the right cut for the recipe you’re making and leave yourself enough time to cook them low and slow.

In fact, I’m a huge fan of making them a day ahead. They actually taste better when they’re reheated, plus it’s so much easier to de-fat the sauce when it’s cold. Win-win. The only problem with making them in advance is that on the day you cook them, your house will smell like delicious short ribs that you will have to wait to devour. Lose-lose!

I’m calling this a salad even though it’s technically more of a “slaw”. Unfortunately, Matt despises that word and I don’t want him to make that “Um…ew” face that I find hilarious except when it’s directed at my beautiful Asian slaw. Excuse me… salad.

What words do you inexplicably hate? My sister-in-law, Kathy, hates the word “moist” (so I try to use it as often and as awkwardly as I can). “Boy, those (meat)balls sure look moist!”

I can’t stand the word “meal”.  As in (bored diner waitress plops down plate) “Enjoy your meal.”  (I convulse and try to picture my happy place).

Well, this slaw is very moist and would make a great addition to any meal.  (I think I just died).

You don’t need to break the bank to make a luxurious dinner. Shrimp and Lobster Risotto packs a ton of flavor into a comforting rice dish.  

For years my best friend, Heather, and I would hang out on New Years Eve at one of our apartments (usually on the Upper West Side of Manhattan where we grew up), where we would drink champagne and sigh about how nice it was to not be in an over-priced bar annoyingly packed with drunk frat boys and tourists. We’d watch the Times Square shenanigans on TV and chuckle about how cold and miserable everyone looked when they didn’t think the cameras were on them.

10 pm would roll around and we’d be jolly and happy, in a warm apartment, wondering if we’d even stay up until midnight. By 11, we would get a bit antsy and one or the other of us would start looking out the window at the revelers below, wondering if they were having more fun than they  seemed to be earlier in the evening. “That girl across the street sure seems to be laughing a lot.” “Yeah, hmmm… and it doesn’t even sound like it’s that cold out.”

Inevitably, by 11:30 we’d be in full blown panic mode, convinced that we were missing out on the most amazing time ever, so, wild-eyed and twitchy, we’d race down Amsterdam Avenue, pressing our faces up against every bar window, cursing ourselves that we didn’t pay the $65 cover charge earlier because now they’re full and everyone inside seems so happy—why are they so happy—how come we’re not in there—let’s check that bar across the street!

By 11:55 we’d be pounding our frozen fists against the door of some random dump like Dustin Hoffman in The Graduate, begging anyone to take pity and sell us a $25 glass of supermarket champagne. Happy new year!

What I’m trying to say is GOING OUT ON NEW YEARS EVE IS FOR SUCKERS.

Luckily, Matt agrees with me so we’ve developed our own tradition (stolen from my dad and step-mom) of steaming lobsters, getting the best French fries we can find and eating everything as messily as possible on a table covered with newspapers and butter drips. Heaven.

I should add that we always steam an extra lobster in case a hungry stranger shows up at our door so we can make something with it the next day. So what to do with leftover lobster? Of course you could make lobster rolls but why not make risotto! Obviously you could also cook lobsters specifically for this recipe (tips for steaming lobsters below). We also added shrimp because we only had one small lobster left. One of the great things about this recipe is that, though it seems really decadent, two lobsters will feed six people, and nothing is wasted since you use the shells to make a flavorful broth to cook the rice with. Fancy and thrifty!

White Bean, Roasted Garlic and Feta DipIt’s party season which, yay!!! So much fun. But also, boo!!! So much work. That’s why it’s great to have a few easy, fast and inexpensive recipes to fall back on when the hungry hordes arrive (auto-correct keeps changing hordes to whores. So if your house is full of hungry holiday whores, all the power to you!). Ahem, *adjusts glasses*.

Dips! Dips are great. Everyone loves dips. They can sometimes be a little boring though, right? I love a good onion or spinach dip, but sometimes I want to shake it up a little bit. This White Bean, Roasted Garlic and Feta Dip is basically like a Hummus but, to me, a whole lot tastier. It’s creamy from the yogurt, tart from the lemon and feta and plain old delicious from the roasted garlic. Awww yeah.

Best part? I bet most of the ingredients are in your pantry and fridge right now. Maybe not the feta cheese, but everything else is probably there. I’m right, aren’t I? Go look!

Miso salmon is one of our absolute favorite weeknight standards. When our local supermarket has good salmon (which is most of the time), we get a pound center-cut (so they cook evenly) and make this dish.

If you’ve never cooked with miso, this is a fantastic recipe to start with. While many Americans are probably familiar with miso in it’s soup form, it’s also a fantastic ingredient in all kinds of dishes, from savory to sweet. It’s great in salad dressings, drizzled on roasted vegetables (try this same glaze on eggplant, yum).

One of the great aspects of miso is that it keeps for ages in the fridge (seriously, over a year). You won’t have to go on a miso bender just so you won’t waste it. I mean, you’ll probably go on a miso bender anyway because the stuff is delicious but it won’t be for economic reasons.

This salmon dish is what I use miso for most often (and how I love it best). The glaze is delicate and doesn’t overwhelm the fish and the skin gets wonderfully burnished and crisp. It also takes just a few minutes to make so it’s a fantastic weeknight option. Quick or not, for me, this is one of the best salmon recipes of all time. I could have it twice a week, happily.

You’ll want to use white (also known as sweet) miso for this. Red miso, which is fermented for a much longer time, has too strong a flavor and would overpower the fish. I serve it with steamed rice (sometimes white, sometimes brown) and my go-to with everything Pickled Cucumber and Avocado Salad. I didn’t have cucumbers last night; we made a quick salad of avocado, arugula and baby kale drizzled with lime.

Oh, and Matt wanted me to make sure to mention that this is his favorite fish recipe of all time. He says that about a lot of recipes (good husband), but I could tell he really meant it.

Turkey Stock for Gravy

Ultimate Turkey Stock for GravyAsk me what my favorite Thanksgiving recipe is. Go on, ask. Fine, I’ll tell you anyway, but it might just blow your mind (not really, but just go with me here). It’s home-made turkey stock. Well, it’s really the gravy that is made with that stock but I’ll get to that soon.

I know it’s not gorgeously colorful like Mashed Butternut Squash. It’s not a crowd-pleaser like Sausage Stuffing With Apples and Sage, but it really does make everything it goes into taste so much better.

I wish I could say I was one of those people who always has a freezer full of home made stock ready for any culinary adventure, but the truth is I use boxed chicken stock all the time. It’s so convenient and the decent ones taste pretty good.

But for Thanksgiving I always go the extra mile and, funnily enough, it really kicks off the holiday season for me. It’s always the first recipe I make (often a week or even two before Thanksgiving) because I can make it on a weekend and freeze it until it’s needed. Honestly, I think it’s what makes this Make Ahead Turkey Gravy with Calvados (Apple Brandy) so irresistible.

Spiced Pickled GrapesAt the risk of sounding like a Portlandia sketch, I am a little obsessed with pickling. You take something yummy, plop it in some vinegar, sugar and spices and it tastes even better. And lasts longer! Win-win, right?

When Matt and I lived in Brooklyn, we used to go to this great place called Buttermilk Channel (I say that like we could just waltz right in, la di da, but there was almost always a line down the block. Damn you, Brooklyn!). Anyway, they have a chicken liver mousse that they top with two perfectly sweet/tart pickled grapes. Divine. Since we don’t live stumbling distance from them anymore, I decided to try to make it myself. I know it sounds weird but pickled grapes are really good.

If you swing that way, do yourself a solid and make this easy and delicious Chicken Liver Pâté with Thyme and Brandy and put a couple of these bad boys on top. You can thank me later (or invite me over and we can giggle maniacally about how good this combo is). You could also just put out a bowl of them and eat them by the handful. They would be great alongside a sharp cheese or even in a cocktail.

Creamed Pearl OnionsCreamed pearl onions is one of those holiday dishes that seems so unnecessary… until one year you don’t make it and everyone gets mad and you realize it’s a tradition for a reason, damn it. There’s something about that soft (but not too soft) texture and that simple, pale sauce that just works.

It’s a little smoky from the bacon. A little boozy from the sherry. Pure holiday delight.

If you’re looking for a quick, inexpensive weeknight dinner, boneless, skinless chicken thighs are a great option. All they need is a few minutes in a marinade, 25 minutes or so in the oven (even quicker on a grill or grill pan) and they’re ready to go. Unlike chicken breasts, which dry out if you stare at them too long, thighs are extremely forgiving. They’re actually hard to overcook.

I like baking them with this lemony, garlicky marinade (recipe below), but you could easily switch the flavors around. I sometimes use soy, honey and ginger. Sometimes sage, rosemary and mustard. The process is the same. Really, by the time you’ve made a salad and opened a bottle of wine, they’re pretty much done.

Pickled Cucumber and Avocado SaladI’ve already admitted that I’ve become obsessed with cucumbers since discovering my dog loves them so much. I love them in cocktails, dipped in Feta-Yogurt Sauce, even just plain. But lightly pickled with rice vinegar and sesame oil is my all time favorite.

This is an incredibly quick and easy side dish with Thai Shrimp Cakes. It’s also great with seared salmon or any other fish. It takes seconds to make. It’s also vegan and gluten-free, to boot!

Maybe it’s just me, but for years I was completely intimidated by the idea of poaching eggs. I could make them pretty much any other way but poaching… um, no.  I  attempted it a few times and ended up with watery egg drop soup. Gag.

The thing is, I really like poached eggs and I didn’t want to have go out for brunch every time I craved them. So I read a bunch of cookbooks (this was pre-internet, you iPhone babies), practiced a few techniques and now… perfect poached eggs, every time.

I’m telling you, it’s easy peasy as long as you do a few things. One, don’t use boiling, bubbling water. A gentle simmer is the way to go here. Two, crack each egg into a little cup or ramekin first. Makes it so much easier to plop in the water. Three, swirl. I’ll explain that one later.

I’ve paired these poached eggs with Creamy, Soft Polenta and Kale and Walnut Pesto. Best breakfast ever?

What you’ll need:

Ingredients for Kale and Walnut Pesto
 
Today we’re making kale and walnut pesto (inspired by The Hop’s Kale and Almond Pesto), to go with our Sausage with Creamy Polenta and Kale Walnut Pesto. Even if kale is not your favorite thing, this is a good way to try it because it’s so good for you, but also deliciously cheesy/nutty.  It would definitely be great on pasta or on anything that basil pesto is good with.
 
We would claim to have used nuts from our black walnut tree, but as the linked article admits, they’re impossible to harvest efficiently!
 
Oh, and here’s our recipe for creamy polenta.

Creamy, Soft Polenta

Creamy Polenta
This polenta is meant to have a soft, porridge-like consistency. We used it for Sausage with Creamy Polenta and Kale Walnut Pesto but it would be great with any kind of stew, as a substitute for mashed potatoes or noodles.
 
What you’re looking for is course, stone-ground, long-cooking polenta. Of course, you could use instant instead but it won’t taste quite the same.

Use whatever sausage you like  (turkey, pork, lamb or chicken would all work well) or add some drilled tofu for a veggie version. The only sausage I wouldn’t try is seafood since it’s delicate flavor would probably be overwhelmed by the cheesy polenta and the kale. 

I’ve posted separate recipes for the polenta and the pesto, so for this, all you need to do is brown the sausages and serve.
