These cheese arepas have a double whammy of flavor. Cheddar cheese in the dough helps them cook up beautifully crispy and golden brown. They’re stuffed in the center with Cheddar and jack cheese and a delicious green olive and date spread. Our arepas are sweet, savory and bursting with cheesy goodness.

Besides being nerdy about movies, television and all things culinary, Matt and I both share a dorky fascination with etymology (the history of words). I’ve written about my most hated words in a previous post (which had to be titled Asian Cabbage and Fennel Salad because Matt despises the word ‘slaw’). Now I thought we’d list some of our favorites (join us and write yours in the comments!).
In our version of Pollo a la Brasa , we marinate chicken thighs in garlic, soy sauce, lime juice and spices, then roast them until the skin turns golden and crisp.
We couldn’t let Christmas come and go without reposting this. It’s one of our earliest posts, but one of our very favorite recipes and something we make every single year for family parties. It just may be the toffee of your (my) dreams and while I may be indulging in a tiny bit of hyperbole, once you try it, you’ll know that I might be dramatic, but I am not a liar. In the past, I proclaimed this Salted Caramel Sauce the best thing ever and I stand by that. It’s just that there’s room on the pedestal for that sauce’s cousin from across the pond, real English toffee.
While other toffee types are available, this toffee is hard and brittle, and thin enough that you won’t need a tiny hammer to break it up.
Why This Toffee Works
I’ve made a lot of toffee recipes over the years and this one is by far the tastiest and the easiest. It not only has a really nice balance of sweet and salty but a clever secret. The addition of a very small amount of corn syrup pretty much eliminates the danger of the sugar crystallizing (this has happened to us a few times, and can be a real bummer). This problem is caused when the sugar crystals start a chain reaction of crystallization (the process of sugar particles clinging together) which makes the mixture grainy. Once it happens there’s not much you can do about it, but there are a few things that will help prevent it from starting.
A simple, healthy Thai shrimp salad with an authentic sour-savory-spicy-sweet combination of fresh lime juice, fish sauce and chili paste, showered with fresh herbs and crunchy roasted peanuts.
Summer is almost done but we are officially in the middle of a heat wave. You know those shots in movies of a long, empty road, heat lines shimmering up from the pavement? Maybe a tumbleweed blows by, lazy and misshapen? That’s our living room right now. In this case the “tumbleweed” is Arya, our rescue dog who, for a pup who lived her first year on the streets of West Virginia, is hilariously particular about the range of temperatures she finds acceptable. 70º – 75ºF is fine, but a few degrees in either direction and get ready for dramatic sighs and woeful glances.
One of my favorite words of all time is the French word for grapefruit: Pamplemousse.
Say it! Pamplemousse. It’s hilarious, right? It sounds like it should be Liberace’s favorite color. “Why yes, we had the whole living room done in pamplemousse and mauve. It’s divine.”
I also love that it’s a pretty effective insult in French, meaning an annoying, pesky, person who is immature. And of course, it also means boobies. So many uses!
Of course the best use for un pamplemousse, as it is for most citrus in my opinion, is to juice that thang and mix it with some spirits. In this case vodka and elderflower liqueur.
Give grilled chicken thighs or breasts a long pre-cook marinade in Green Goddess dressing, and then char them to perfection along with sweet red onions. Then dollop more herby dressing on them for good measure and eat dinner under the stars.
Well, it was inevitable. Last week, after complaining that the summer had been so cold after a spring that was so cold and a winter that was so very cold, we finally got hit with the annual New York heatwave. And to the friends and family members who always say “OMG I love this heat! I could take it all year round!”, I literally do not know who you are and please get off me with your sweaty hug. While we were merrily cavorting around the garden a few days ago, tending to the herbs, the tomato plants and the budding zucchinis, now we’re staring sadly through the window from the air-conditioned interior. It may look pretty out there, but just half an hour in the sun and we both tend to go all Mad Max Fury Road. And nobody wants that.
So if we can’t go to the herbs, the herbs must come to us. And that’s best achieved in the form of Green Goddess dressing. If you’re not familiar with it, it’s basically a fancied up ranch, loaded up with Greek yogurt, a little mayonnaise, garlic and all the soft herbs in the garden.
Matt here. Emily’s going to come in with the important tasting notes and all that later in the article, but I just wanted to share an anecdote from our very early cohabitation. When we first moved in together, I remember I was clearing room in the fridge – and at the time, Emily had a really beautiful spacious fridge (I think it was even bigger than the one we have now) and there was plenty of room to hide stuff at the back of the shelves. I was clearing out room to fit in whatever we’d bought together at the store, and I spotted a jar whose contents were unfamiliar to me. I opened the lid and, I don’t remember now, but I probably cursed. I think I might have warned Emily that there was something really bad in there that needed to be thrown away right that second, and preferably triple-bagged. I warned her that we might have to replace the fridge. I warned her that we might have to move.
We love a good cocktail around here, but more often than not, when we’re looking for a drink to pair with our food, we choose wine. Both of us love the versatility of rich red varieties: making Grilled Steak With Blue Cheese Butter? Red wine is the perfect choice. Having friends over for cheese and charcuterie? Red wine is a must. Hosting a holiday Pork Roast? Yup, you know what to serve with it. As soon as we tasted this wonderfully fruity and spicy Mullan Road Cellars Red Blend, we knew we wanted to drink it with something grilled. We decided to take inspiration from one of our favorite classic dishes, Eggplant Parmesan, and lighten it up for summer. To bring it out into the sunshine, if you will.
Ramps (wild leeks) have a sweet, garlicky flavor that pairs beautifully with brown butter and caramelized oyster mushrooms. We pile this on top of toast that has been slathered with creamy ricotta cheese, making a delicious, simple appetizer.

If you have no idea what ramps are, you would be forgiven for thinking it’s some kind of disease that turns people into drooling, seasonal zombies. Because like Walkers, we (the afflicted) wander the countryside, arms outstretched, moaning “Raaaaamps. Raaaaaaaaaaamps.”
Come spring we wistfully scan shady hillsides for tell-tale green shoots. We travel great distances to far-flung farmers markets. We meet dodgy ramp dealers* in back alleys, taking our very lives in our hands, all in hope of scoring some of that delicious, garlicky goodness.
*Note: I have never actually met a dodgy ramp dealer but I bet they exist. I can just picture some bearded hippy dude standing on the corner whispering, “Pssst. Ramps. Meet me behind the compost bin in 5. Namaste.”

When the cold evenings get you thinking about a warming supper, but there’s still farm fresh corn in the market, corn chowder is our favorite way to ease into autumn. This version combines sweet corn and smoky bacon in a creamy broth, dotted with lightly poached shrimp and sliced jalapeños to soothe the end-of-summer blues.
What happened to summer? It seems as though the season just started, and its bounty had only yesterday begun to fill the supermarket shelves. Just like that, it’s all done for another year. Fortunately, even the Northeast still has plenty of farm fresh corn to offer – a cornucopia, you might even say – and we’ll take up our supermarket’s “12 corn cobs for $4!” offer as long as we can. This aren’t the tiny, young cobs from July that we could almost eat raw – at the end of the season, while corn is still pretty tasty, but not really at its peak, it’s a fantastic ingredient in a soup or stew. Hence: shrimp and corn chowder.
The perfect use for our gorgeous pink blueberry lemon curd, these pastry tartlets are flavored and decorated with almonds. Each tartlet is a miniature delight, yet sufficient to share with a loved one (or keep to yourself, of course, you gannet).
When we saw how striking our blueberry lemon curd turned out, we knew it wouldn’t be enough simply to slather it on some toast (as delicious as that might be). Something that gorgeous and cheeky deserved to be showcased – and this was our solution: adorable little blueberry lemon curd tartlets. A shortcrust base generously flavored with ground almonds and a little fresh rosemary, pre-baked, cooled, and filled with the curd, which we decorated wth more ground and sliced almonds, some fresh blueberries and a few flowering mint sprigs.
Take our already delicious and zingy lemon curd, add blueberries, and you have yourself a shockingly colorful and brilliantly tasty fruit curd that will dazzle your breakfast table.

A perfect Scotch Egg has a crisp golden shell, flavorful sausage and most importantly, a soft-boiled, runny-yolked egg. This just might be the ideal portable picnic snack – that we’d be happy to eat anywhere, even the dining table.
Sometimes we want to start the day with an omelette: maybe cook up some chopped leafy greens, sauté a few mushrooms until they’re golden, throw in a handful of cheese, and enclose the whole thing in an egg jacket. And sometimes, we want to flip the whole concept inside out and bake the eggs right on top of the other ingredients, because, you know, we’re mavericks like that.
It does take a little longer than the omelette method, and it requires turning on the oven. But really, since we’re fully cooking the greens and mushrooms either way, it’s the difference between a couple of minutes standing at the range and 20 minutes of unattended baking. You can also cook the creamed greens ahead, and bake the eggs when you’re ready for eat.

As a cooking couple, we’re aware of a lot of the clichés that link food with romance. The way to a man’s heart is through his stomach. The couple that braises together…stayses together. You know, the classics.
It is true that if you can work together and communicate well in the kitchen, if you can appreciate each other’s skills and enjoy your combined successes, and if you can laugh at and learn from your culinary failures, your relationship probably has a pretty solid footing. It helps to have a recipe like this braised short ribs dish. There are a few steps to it, but nothing is time-critical, so you can hang out in the kitchen and talk about how your day was while you do the prep and get the ribs in the oven or slow cooker.

If there’s one single food that universally divides childhood from adulthood, it has to be the poor old Brussels sprout. If you weren’t commanded as a kid to “eat your sprouts!” you were either very lucky, or you had good family recipes and were able to learn early on that the sprout can be one of the most delicious vegetables imaginable. Our formative years had more “ugh” moments than “mmm” when it came to sprouts, so we’ve had to rethink our approach. Fortunately, it’s not hard to come up with a recipe that highlights the strengths of the smallest brassica.

As a writer, I die a little inside every time I use an exclamation mark (enough already, Internet. I get it, you’re excited). But if ever a sandwich deserved some un-ironic enthusiasm, it’s this one. It’s crispy! It’s spicy! It’s tender and juicy and slathered with basil mayo!
I know I sound completely, utterly ridiculous but I don’t care! It’s that good.
If you’ve never cooked with miso before, this is the perfect recipe to start with. If you love it and cook with it all the time, this is probably going to end up on your monthly recipe rotation. It definitely has for us.

Ramps, a seasonal treat in the Northeast US, are in danger of being over-harvested. Since they are very slow to cultivate and difficult to farm, foraging is still the main way to find them. A wild ramp patch can be quickly overrun and destroyed. The most sustainable way to harvest ramps, if you find them yourself, is to cut only one leaf of each plant, leaving the bulb and second leaf to continue growing. This is least impactful on the soil, the plant, and the colony as a whole. You’ll find ramps in this form from sustainable vendors.
Every spring I’m reminded of how happy I am that we bought a house in the Hudson Valley. The sun is out and I’m sitting on our deck, watching the chickens romp around the ‘garden’. Yes, ‘garden’ is in quotes because it’s mostly weeds, rocks and buried concrete (why, previous owners? Why?). And yes, those pesky chickens are obsessed with destroying the few plants we’re actually trying to grow. But none of that matters! Gardens can be planted. Chickens can be strangled penned. The important thing is that it’s ours and we love it (sometimes).
Another fantastic thing about spring is all the wonderful fresh green things that are just beginning to show up at the farmers’ market (or your own garden, if you’re lucky and/or talented). A simple pasta dish like this takes full advantage of these fresh flavors, pairing the tender vegetables with crispy pancetta* and a light, creamy sauce.
*You could absolutely leave the pancetta out for a vegetarian dish. You’ll probably want to add a bit more salt since the pancetta is salty.

Before we moved to Brooklyn (so way before we headed up to Beacon), Matt and I lived in one of the most cross-cultural neighborhoods in New York City, Astoria, Queens. It was like the real-life version of one of those 90s comedies. You know, the ones where the cab driver is sitting next to a lawyer who’s sitting next to a dominatrix and they’re all eating souvlaki prepared by a Sikh cook and served by a Russian waitress. It was like that.
It’s still one of the best places in the city to find ingredients from all over the world, especially Mexico, India and Greece. If the area is known for one type of food in particular, it’s Greek. Our weekends often involved a stop at Titan Foods where we would spend most of our rent money on olives and Feta cheese. If you’re ever in the area, check it out. It’s like the Disney-land of Feta up in there, not even kidding.
In this case we’re using feta as the sauce (more of a dip, really), for some incredibly delicious cumin-dusted roasted cauliflower.
The Whipped Feta Dip is delicious with crudités or chips, or as a spread for sandwiches.

Chicken dinner, meet pizza night. Chicken sautéed until golden brown and baked with marinara sauce, gooey mozzarella cheese, spicy pepperoni and fresh basil.
For the sake of clarity and because I really, really like you guys, I want to acknowledge that this title might be a little misleading.
Say you were googling “chicken pizza,” this post might show up (probably on page 35, but whatevs) and I wouldn’t want you to get halfway through reading it before you realized that this recipe is not, in fact, for pizza with chicken on top of it.
This recipe is for chicken cooked in the style of a pizza. And it’s frigging delicious. It’s cheesy and salty and tangy. Exactly the flavors your tongue expects when your brain has told it you’re having pizza for dinner. It also happens to be gluten free and ready in about 20 minutes.
This chicken with lemon, garlic and basil – the flavors of an Italian summer – cooks in one pan and gets a delicious crispy skin.
Even though we are now fully immersed in September, in our neck of the woods yesterday was actually the hottest day of the year so far. The thermometer that we keep by the chicken coop was up to 99ºF (37ºC) by noon, and stayed there until way past dark. Not to sound like a whiner, but that meant that our kitchen was hotter than a three dollar pistol and it was seriously messing with my plans. See, I had been dreaming about making this chicken all summer, and I had already bought all the ingredients that I couldn’t pick from the garden so I just decided to make it anyway, inferno be damned.
This chicken is kind of a variation on one of my favorite dishes of all time, Chicken with Lime, Garlic and Cilantro. It has the same incredible combination of crispy skin and tender meat that is just so damn good. But instead of the latin influence, this version is like a summer vacation in Italy, with the flavors of lemon, garlic and fresh basil.
In the 1970s, the Upper West Side of Manhattan where I grew up was a true melting pot of cultures. I went to a bilingual grade school where classes were taught in both English and Spanish, and staying for dinner at a friend’s house often meant getting to have Arroz Con Gandules (Puerto Rican Rice with Pigeon Peas) or Mofongo (mashed green plantains with chicharrones).
My absolute favorite dish back then was Pernil (Roasted Pork Shoulder), which is flavored with lots of citrus, cumin and cilantro. Just thinking about it is making me hungry, but until I find the time to make a whole pork shoulder, I thought I’d take some of those great flavors and turn it into a much more weekday-friendly chicken dinner.

I feel a tiny bit bad about evangelizing a vegetable that can be very hard to find but this was just too good not to share. Making ramp butter, along with pickling, is one of the best ways to preserve ramps so you can enjoy them all year round.
Your basic ramp, Allium tricoccum, is a North American species of wild onion that grow across eastern Canada and the eastern United States. (The European/Asian variety is allium ursinum.) I know that doesn’t sound very exciting but they have a unique oniony-garlicky flavor that, if you like that kind of thing, is really fantastic. They are also notoriously difficult to cultivate and their growing season is very short, so they are a true delicacy. That means crazy people (me), will travel far and wide to find them, so if you’re lucky enough to have them in your region, don’t expect to saunter over to the farmer’s market at noon and expect to find any left (because I got there at 7 and bought them all).
Maple mustard chicken, infused with flavors and baked in the oven, is one of our simplest, most delicious and popular recipes. It’s all we crave when Autumn rolls in!
Some things are just difficult to explain.For example, how can one man be so attractive yet so clearly resemble an otter? (Yes, I am referring to Benedict Cumberbatch. Click the second link if you want to laugh for 45 minutes).
Also, how can I be so excited about Outlander, when GAME OF THRONES is back on Sunday! (Hey, I can see you making a face but the blog is called NERDS with Knives so it’s not like you were misled.)
And finally, how can the easiest dish to cook also be the most delicious thing ever? This sounds like hyperbole, which granted, I am guilty of a million times per day but I’m not yanking your chain here. This seriously might be the best weeknight dinner we’ve ever made.
I like to think of myself as an organized person. I mean, I’m a film editor, for chrissakes. I basically organize millions of digital moments into a cohesive story for a living. So why is it that I cannot, for the life of me, plan ahead and shop for a week’s worth of recipes?
Is it because I was raised in New York City, where 24-hour bodegas and Korean markets permit, nay, encourage a person to decide at 11pm that they’re going to make a Chard Onion and Goat Cheese Tart even though there is neither chard, onion or goat cheese in the house? Why are you looking at me like I’m attempting to deflect blame for my questionable decisions? Ahem. Anyway, now I live in the boonies and that means I either have to:
A. Get organized and make a menu plan and corresponding shopping list at the beginning of each week.
B. Hit the lottery so I can hire a personal chef (one who allows me to post their recipes all over the internet and hover over their shoulder taking pictures as they cook).
C. Create delicious things that use pantry staples almost exclusively so I can continue my reckless and dangerously chaotic lifestyle.
Guess which one I chose?
I almost always have everything on hand for this recipe and, luckily, it also happens to be incredibly good. Obviously if you eat chicken and enjoy crispy things, nothing’s going to beat real fried chicken but I think we can all agree that deep-frying is not really an option for an easy, healthy, weeknight dinner. This chicken though, is all those things and more. It gets great flavor from the tangy mustard, garlic and thyme and develops a crunchy, golden brown crust.
I also make a simple yogurt sauce to go with it (if I remember to make or buy yogurt), but it’s equally good with just a squeeze of lemon and a sprinkle of Maldon salt over the top.
When it’s dark at 4.30pm, your drafty home refuses to get above 55F, and there’s ice on the INSIDE of the windows, what do you do to warm up in the evening?
You could make a big fort in the middle of your living room with every blanket you have in the house. You could rub two kittens together and bathe in the glow of their static electricity (DISCLAIMER: DOES NOT WORK WITH CHICKENS).
Or you could make these Old Fashioneds with maple syrup.
Mixologists will tell you that these are not real Old Fashioned cocktails, since they aren’t strictly made with plain sugar or simple syrup. While they’re explaining that to you, nod sagely and drink up and then demand another glass of “whatever the hell you want to call it, Poindexter”.
Emily bought me the PDT Cocktail Book and a fine Boston cocktail shaker set for Christmas (do you think she was trying to tell me something? Should I be making more cocktails? Is the answer to that question ever “no”?) which I needed to test out, and their “Benton’s Old Fashioned” was a great starting point. Now they use bacon-infused bourbon, which, delicious as it sounds, I just couldn’t put my hand on.
So use whatever whisky or bourbon you have – we’ve tried both Jack Daniels and the local Hudson Whiskey pictured in these shots. Feel free to adjust the amount of maple syrup or bitters; these are just general suggestions that work for us.
We make these pecan crescent cookies every year as a Christmas treat – the melt-in-the-mouth, nutty, crumbly treats will please any crowd.
You know a cookie is a classic when every person who tastes one says “Ermahgerd, gramma’s kerkies!” (translation: Oh my god, my grandmother used to make those cookies). Whether your grandmother was Italian, Jewish, Latin American, Scandinavian, or Asgardian, chances are, she made these cookies (Well, not my grandmother, who was a famously terrible cook).
Sometimes it’s just nostalgia that makes us swoon over a taste of the past but in this case, familiarity is unnecessary. These pecan crescent cookies are good. They have a melt-in-your-mouth shortbread-like texture and a lovely deep nuttiness. It just doesn’t feel like Christmas without them.
Nerd Tips
Toast the pecans well, but don’t scorch them. I like to do them in a skillet (medium heat, tossing often, about 5-7 minutes until you can smell a nutty aroma). You can also do them in them oven on a baking sheet (325 degrees F, 10-15 minutes, turn them once).
Make sure the dough is fully chilled before shaping the crescents. Also chill them at least 20 minutes after shaping, since they’ll warm up considerably as you handle them.
They won’t really change color much in the baking process, but do make sure the very edges turn a light golden brown. 18 minutes might be enough, but don’t be afraid to leave in a few minutes longer if needed.
Don’t try to sugar the pecan crescent cookies until they’ve completely cooled (overnight is best) or the sugar will melt. Sometimes I sugar them twice to make them extra perty. If you’re serving to fancy people, you’ll probably want to arrange them using tongs, since fingers will very easily melt the sugar.
Would you like some bright tart lemon bars? Yes, I know we’re smack-dab in the middle of Fall and everybody’s hugging their sweaters, walking through crunching leaves and imbibing in pumpkin-spiced everything but this is exactly when I crave bright lemony flavors the most. Don’t get me wrong, I love fall. Halloween is my birthday, for chrissakes, but there’s only so much pumpkin, butternut squash and apple a girl can handle before she starts craving citrus.
As you can probably tell, I reallylikelemon. And when I eat something that claims to be “lemon”, I want to taste actual tartness, not just sugar that a lemon once sat next to in a grocery aisle. So to these lemon bars (or lemon squares, depending how you slice them).
At the risk of sounding like a Portlandia sketch, I am a little obsessed with pickling. You take something yummy, plop it in some vinegar, sugar and spices and it tastes even better. And lasts longer! Win-win, right?
When Matt and I lived in Brooklyn, we used to go to this great place called Buttermilk Channel (I say that like we could just waltz right in, la di da, but there was almost always a line down the block. Damn you, Brooklyn!). Anyway, they have a chicken liver mousse that they top with two perfectly sweet/tart pickled grapes. Divine. Since we don’t live stumbling distance from them anymore, I decided to try to make it myself. I know it sounds weird but pickled grapes are really good.
If you swing that way, do yourself a solid and make this easy and delicious Chicken Liver Pâté with Thyme and Brandy and put a couple of these bad boys on top. You can thank me later (or invite me over and we can giggle maniacally about how good this combo is). You could also just put out a bowl of them and eat them by the handful. They would be great alongside a sharp cheese or even in a cocktail.
I may have mentioned that Matt and I went to the UK last summer and ate a lot of pork belly. It was consistently one of the best dishes we had all over several parts of England and Wales. If there’s one thing the British know, it’s how to make excellent crackling (that sound you hear is Matt furiously listing all the other things British people are excellent at. (So far; crackling, funny shows, more funny shows, chicken keeping). I’m sure there’s more but we’ll leave it at that for now.
This was pretty much a nightly conversation on our trip. Emily: “We have to make this when we get back” (distractedly tries to figure out recipe). Matt: “Stop looking at me like I stole all the crackling!” (whilst licking crackling-glazed fingers).
Well, we’ve been back for six months and our local shop now has lovely local pork belly and we thought we’d finally try to make it in our local stove. In England, it was often paired with bubble and squeak, and a hard cider sauce but I really wanted to try a soy and honey glaze combined with the crisp crackling we found on our trip.
If you can get (good quality, ethically raised) pork belly with the skin still on – you’ll need the skin to get truly crispy pork belly – it’s definitely worth seeking out. It’s a very affordable cut and it’s also very rich, so you’ll want small portions. That being said, I wouldn’t bother cooking a piece smaller than about 2 pounds because it will shrink a lot in the oven and could dry out. There’s also so much you can do with the leftovers.
It’s absolutely lovely paired with a fried egg and this Pickled Cucumber and Avocado Salad (really any crisp, vinegary greens would be great). I also really love it with Sesame Roasted Pears and a tart kale salad. But my all time favorite use of pork belly is Bánh mì sliders. So, so good.
This dish is basically autumn in a pot. It’s orange, it’s delicious, it’s healthy, and you can serve it for Thanksgiving or as a side for any meal.
Now that I live in the boonies and have to drive to the grocery store like a normal, I have a bad habit of buying way too many vegetables at once. I have such optimism in the produce aisle, thinking of all the tasty things I’ll make, but time gets away from me and eventually, with great shame in my heart, I end up with a bin full of bendable carrots and fuzzy broccoli rabe.
But I never, ever regret buying too much winter squash (like acorn, delicata, kabocha and butternut). Those things last for-fricking-ever. I mean, I don’t just adore them because of shelf-life. That would be silly. “Hey, you lazy bastards. Wanna make something that won’t rot?” Damn, I should have gone into advertising. I think I have a knack.
Anyway, I’ve had this butternut squash sitting on my counter for at least 3 weeks (lie, 5 weeks) and look; still perfect! Butternut squash is packed with fiber, vitamins A and C so it’s a great, healthy alternative to mashed potatoes and look at that color. It’s like being punched in the face by fall!
If you’re looking for a quick, inexpensive weeknight dinner, boneless, skinless chicken thighs are a great option. All they need is a few minutes in a marinade, 25 minutes or so in the oven (even quicker on a grill or grill pan) and they’re ready to go. Unlike chicken breasts, which dry out if you stare at them too long, thighs are extremely forgiving. They’re actually hard to overcook.
I like baking them with this lemony, garlicky marinade (recipe below), but you could easily switch the flavors around. I sometimes use soy, honey and ginger. Sometimes sage, rosemary and mustard. The process is the same. Really, by the time you’ve made a salad and opened a bottle of wine, they’re pretty much done.
I’ve already admitted that I’ve become obsessed with cucumbers since discovering my dog loves them so much. I love them in cocktails, dipped in Feta-Yogurt Sauce, even just plain. But lightly pickled with rice vinegar and sesame oil is my all time favorite.
This is an incredibly quick and easy side dish with Thai Shrimp Cakes. It’s also great with seared salmon or any other fish. It takes seconds to make. It’s also vegan and gluten-free, to boot!
