Mughlai Cauliflower (in a Creamy Almond Curry Sauce)

This vegetarian side dish or main course features roasted cauliflower in a fragrant, creamy sauce, spiced with ginger, cinnamon, anise, and more, and studded with plump raisins and slivers of crisp almonds.

When your childhood introduction to most vegetables is through their boiled varieties, you might be forgiven for seeking any alternative — anything at all! — to another plate of pallid, soggy specimens. I’m not saying rural England in the 1970s was unimaginative when it came to mealtimes, but … well, yes, that is actually what I’m saying. I am saying exactly that. Nothing was immune to the standard preparation (boiled beyond all recognition). I couldn’t again face parsnips or rutabaga (what we called “swede” which was served up in tiny cubes from a can) until well into my 30s. And then, of course, there was the poor old cauliflower. It’s such a healthy food – packed with nutrients and vitamins, but if you’re just going to boil it to death, what’s the point?

The perfect use for our gorgeous pink blueberry lemon curd, these pastry tartlets are flavored and decorated with almonds. Each tartlet is a miniature delight, yet sufficient to share with a loved one (or keep to yourself, of course, you gannet).

When we saw how striking our blueberry lemon curd turned out, we knew it wouldn’t be enough simply to slather it on some toast (as delicious as that might be). Something that gorgeous and cheeky deserved to be showcased – and this was our solution: adorable little blueberry lemon curd tartlets. A shortcrust base generously flavored with ground almonds and a little fresh rosemary, pre-baked, cooled, and filled with the curd, which we decorated wth more ground and sliced almonds, some fresh blueberries and a few flowering mint sprigs.

Have you ever dragged your a$$ all the way to Ikea supposedly because you desperately need a new Lillnaggen for your bathroom (but really it’s because you can’t live another day without a Swedish meatball). Do you crave meatballs the way a theater kid craves a spotlight? Do you power-walk straight past all those cozy-looking beds and then say, “Oh look, the cafe. Totes forgot they had one. Hmmm, it does happen to be meatballtime, er I mean lunchtime.”

(Five orders of meatballs later…) “What?”

French Onion Strata – a savory bread pudding

The flavors of French onion soup transported into a hearty, cheesy strata. The heart of bread pudding paired with the soul of a classic soup – synergy on a plate.

We’re big fans of bread pudding of almost every stripe. With one basic method and either a savory or a sweet set of ingredients, you can throw together a wide variety of dishes with bread, eggs, and milk: the framework. We generally reserve the term “bread pudding” for a sweet variation, and “strata” for the savory version where there’s usually more eggs involved. It works so well, for the last few years we’ve exclusively used a strata as a Thanksgiving-day stuffing. We liked the technique so much, we wanted to find out what else we could do with it.
