A beautiful, healthy salad that combines thinly shredded brussels sprouts and red cabbage with toasted walnuts and Pecorino cheese. Simple but so delicious. 

In the midst of all the joyous holiday feasting, it’s easy to forget the pleasures of a simple, really good salad. Don’t get me wrong, one glance at our Instagram feed tells you that we’re chock full of holiday spirit (in the form of toffee, cookies and homemade eggnog) but sometimes it all becomes just a bit too much, you know?

I was going to make this salad for Thanksgiving but feared there would be a riot if there was no Shredded Brussels Sprouts with Bacon and Pecans on the buffet, so I played it safe.

Sometimes I think I would probably be fine just having condiments for dinner. A few pickled grapes, maybe some chive Hollandaise licked off a spoon. And these. A whole bowl of these, please.

I wanted something a little sweet and tart to go along with our Grilled Steak with Blue Cheese and Chive Compound Butter and as soon as I saw Ina Garten’s recipe for Balsamic Onions, I knew I wanted to do a version of it. I added thyme because I love their flavor with anything roasted, though rosemary would also be great. I also increased the cooking time by quite a bit because I wanted the onions to be quite soft and caramelized, as opposed to still crunchy.

Radishes Drizzled with Sesame Oil and Maldon Salt

Radishes

Sometimes the best approach to fresh produce is to treat it lightly in the kitchen, and let its natural flavor shine. This is how we love to eat radishes: a little sea salt, a little sesame oil, and that’s it.

This is a very simple take on the classic combination of radishes and butter. In this case the butter has been replaced with toasted sesame oil which has a wonderful rich nuttiness that pairs beautifully with the crisp radishes. Maldon Salt is my favorite flaky sea salt but you could use fleur de sel or whatever kind you prefer. It’s so simple but it’s incredibly delicious.

Here in the Hudson Valley we had one fleeting afternoon of warmth but then, like a high school bully who tells you your sneakers are cool so you’ll look down and then flicks you on the forehead, we got sucker punched.  Even the chickens were like, “Seriously? We are so over this,” when I went to the coop this morning.

Every year I forget that Spring vegetables like ramps and asparagus don’t start to show up at the Farmer’s Market until mid-April at the earliest so right now, it’s mostly the same selection you find in Fall. Which is not a terrible thing when you can get great stuff like butternut squash, apple cider and baby kale.
