Lemongrass Collins

A lemongrass collins takes a little time, but you will end up with a delicious, refreshing cocktail that will also knock you on your arse.

Lemongrass CollinsThis unbelievably delicious Lemongrass Collins recipe comes from Barnum Cafe in Rome. Have Matt and I ever been to this darling-looking place? Um…no. But we know people.

Important people.

Our dear friends, Rickey and Barbara, went to Italy and, being the most fun people that ever lived, managed to convince the bartender from Barnum Cafe to give them the recipe. I then harassed them into giving it to me. And I am now giving it to you, the internet.

Quick aside: Matt and I recently spent the weekend with them, drinking these cocktails and watching a marathon of the first season of The Knick. For me, one of life’s greatest pleasures is spending time with people who make me laugh, cooking great food, drinking delicious drinks, and watching Clive Owen do creepy things to Bono’s daughter.

Lemongrass and Lemon-Peel Infused Vodka

Lemongrass vodka: simple infused vodka with a delightfully deep citrus flavor. Did you know that if you put tasty things into vodka and let it steep for a while, you wind up with vodka that tastes like whatever delicious thing you put in it? I can’t believe I’ve never done this before. To be honest, … Read more

Roasted Tomatillo Salsa Verde

Roasted Tomatillo Salsa Verde

We put together two different versions of salsa verde with some tomatillos, avocadoes, garlic and spices, and pretended to be into sports just to hang this article on a game theme! Hint: we are not into sports.

I’ve always envied people that were really into watching sports. I would love to care about something (other than nerdy television shows) enough to paint my face, don a kooky costume and brave the cold, just to prove my commitment and loyalty. To feel the agony of defeat in the hopes of, one day, just maybe, getting to experience the glory of ultimate victory.

But nope. Just don’t give a toss. Matt doesn’t follow sports either (with the exception of the occasional World Cup match, of course).

This is a rough approximation of Matt and me watching the news when the sports headlines come on.

SPORTSCASTER [Very excited]: AND THE STEELERS SCORED AN AMAZING SEVENTEEN AND FIFTY-SIX AND A HALF YARD PASSES LESS THAN SIX MINUTES APART IN THE FOURTH QUARTER! UNBELIEVABLE!!!!!

MATT [Pops a chip in his mouth]: What is this? Are they playing shove ha’penny?

EMILY [Rolls eyes]: No, idiot, I’m pretty sure it’s … (squints) …quoits.

Strata with Corn, Scallion and Cheddar

Corn, Scallion and Cheddar Strata

A strata, or bread pudding, is one of the best options when you want all the breakfast things in one pan. Our version is made with fresh corn, chopped scallions, and cheddar. Best part? You can have it any time of day, not just for breakfast!

We had only lived in Beacon for about six minutes before Matt decided he wanted to build a coop and raise chickens. Being a born and raised New York City girl (whose idea of the “country” was the slightly less organized part of Central Park), I thought he was nuts. Well, I know he’s nuts but I that’s pretty much why I married him. I still thought raising chickens would be … unwise for two people who had lived the rural life for all of a millisecond. [Matt says: Speak for yourself, city girl, you know where I grew up, every set of directions included the step, “Turn left at the first cow, and if you reach the second cow, you’ve gone too far”]

Now I can admit it. I was wrong. Not only have the chickens been awesome, they’re also the easiest of our animals to take care of and they contribute to the household by laying delicious, fresh eggs. In fact, they lay so many damn eggs that using them up is actually the most difficult part of keeping them. [Matt is holding a shovel and a large bag of chicken poo and shaking his head sadly for some reason.]

Nerd alert: I’ve come to realize that chickens are hilarious so let’s have a chicken caption contest. Write in the comments what you think each chicken is thinking.
