Sesame Roasted Pears

Roasted pears become even more delicious with a drizzle of sesame oil and sesame seeds. Perfect as a side for pork belly and rice!

It’s pear season! I love pears but I find it impossible to catch them at their perfect ripeness. They go from being hard as a rock to mush in what seems like minutes, don’t they? I also get an itchy mouth from most raw fruit (such a bummer during peach season) but pop these in the oven for 20 minutes and problem solved!

I first made these with duck breasts (using a Tyler Florence recipe) but thought it would be delicious with my newabsolutemostfavorite thing ever, Crispy Pork Belly with Soy Honey Glaze.

This recipe would also be a really great addition to a Thanksgiving table. The sesame flavor is very mellow, almost a little nutty and would complement traditional Thanksgiving flavors well. You could scatter some toasted walnuts and Bleu cheese over them … oh my god, that would be so good. (I must resist the thought of leaving work to go and make this right now.)

It’s better to use slightly under than over-ripe pears but it’s a pretty forgiving recipe.

This dish is basically autumn in a pot. It’s orange, it’s delicious, it’s healthy, and you can serve it for Thanksgiving or as a side for any meal.

Now that I live in the boonies and have to drive to the grocery store like a normal, I have a bad habit of buying way too many vegetables at once. I have such optimism in the produce aisle, thinking of all the tasty things I’ll make, but time gets away from me and eventually, with great shame in my heart, I end up with a bin full of bendable carrots and fuzzy broccoli rabe.

But I never, ever regret buying too much winter squash (like acorn, delicata, kabocha and butternut). Those things last for-fricking-ever. I mean, I don’t just adore them because of shelf-life. That would be silly. “Hey, you lazy bastards. Wanna make something that won’t rot?” Damn, I should have gone into advertising. I think I have a knack.

Anyway, I’ve had this butternut squash sitting on my counter for at least 3 weeks (lie, 5 weeks) and look; still perfect! Butternut squash is packed with fiber, vitamins A and C so it’s a great, healthy alternative to mashed potatoes and look at that color. It’s like being punched in the face by fall!

We had it with Baked Chicken Thighs with Lemon and Garlic. It’s a great combination.

If you’re looking for a quick, inexpensive weeknight dinner, boneless, skinless chicken thighs are a great option. All they need is a few minutes in a marinade, 25 minutes or so in the oven (even quicker on a grill or grill pan) and they’re ready to go. Unlike chicken breasts, which dry out if you stare at them too long, thighs are extremely forgiving. They’re actually hard to overcook.

I like baking them with this lemony, garlicky marinade (recipe below), but you could easily switch the flavors around. I sometimes use soy, honey and ginger. Sometimes sage, rosemary and mustard. The process is the same. Really, by the time you’ve made a salad and opened a bottle of wine, they’re pretty much done.

Pickled Cucumber and Avocado SaladI’ve already admitted that I’ve become obsessed with cucumbers since discovering my dog loves them so much. I love them in cocktails, dipped in Feta-Yogurt Sauce, even just plain. But lightly pickled with rice vinegar and sesame oil is my all time favorite.

This is an incredibly quick and easy side dish with Thai Shrimp Cakes. It’s also great with seared salmon or any other fish. It takes seconds to make. It’s also vegan and gluten-free, to boot!

For me, lamb is definitely hit or miss. I either really enjoy it or really, really, really don’t. There is very little middle ground. If it’s too gamey, I don’t like it. Overcooked, blech. Undercooked, even worse! Needless to say, I’ve made some expensive lamb mistakes.

What I’ve realized though, is that ground lamb is not only much less expensive than other options, but it’s also a lot easier to handle. Matt loves lamb chops, so I’ll make them once in a while on a special occasion, but lamb burgers are a much more affordable indulgence.

I used to make lamb burgers with more of a North African flavor thing going on (lots of spices like cumin, cinnamon and paprika) but the way I like them best is more Mediterranean. Lots or herbs, like rosemary and mint. Very lemony.

To be honest though, the star is this Feta-Yogurt Sauce that is so simple to make, but so good. I always make extra so we can have it on grilled vegetables (it’s killer with roasted eggplant). We’ve used it as a dip with pita chips or sliced cucumbers. This recipe makes about 2 cups, which is enough to top 4 burgers with maybe a little extra. If you happen to have a tater-tot on hand that accidentally falls into a bit of this sauce, you’re in for a treat.

***WARNING*** This will be your dog’s face as you eat this burger. Do not give her any (because burger is too good and onions and garlic are poisonous to pups!) She MAY have captured a tater-tot though.

Maybe it’s just me, but for years I was completely intimidated by the idea of poaching eggs. I could make them pretty much any other way but poaching… um, no.  I  attempted it a few times and ended up with watery egg drop soup. Gag.

The thing is, I really like poached eggs and I didn’t want to have go out for brunch every time I craved them. So I read a bunch of cookbooks (this was pre-internet, you iPhone babies), practiced a few techniques and now… perfect poached eggs, every time.

I’m telling you, it’s easy peasy as long as you do a few things. One, don’t use boiling, bubbling water. A gentle simmer is the way to go here. Two, crack each egg into a little cup or ramekin first. Makes it so much easier to plop in the water. Three, swirl. I’ll explain that one later.

I’ve paired these poached eggs with Creamy, Soft Polenta and Kale and Walnut Pesto. Best breakfast ever?

What you’ll need:

A deep, wide skillet (something like this)
