Insanely Delicious Key Lime Pie
Tasting Key Lime Pie instantly makes me feel like I’m on vacation. It’s decadent, refreshing and just plain old fun.

It’s possible that I have scurvy because recently I cannot get enough citrus. And not like regular old lemons and grapefruits. Fancy fruit. Last week it was kumquats. This week, key limes.

The fact that they are both adorably wee versions of regular-sized fruit may have something to do with it. I admit it. I am undeniably attracted to Lilliputian produce.

Now I’m going to tell you a secret about key lime pie. You actually don’t need key limes to make it. Regular, grocery-store Persian limes taste just as delicious. I had never seen fresh key limes before (and they weren’t that expensive) so I decided to go for it but don’t fret if you can’t find them.

Jalapeño Popper Stuffed Chicken BreastsWith the exception of East Williamsburg, just about every apartment I rented in New York City had at least one bodega on the corner. In fact most blocks had several bodegas, a couple of Korean fruit & vegetable markets and possibly a Whole Foods/Trader Joes.

Now that we live in the Hudson Valley that’s just not the case any more (though now we own a house and have a garden and a dog and a bunch of chickens*, so okay, fair trade). But the truth is that, even three years later, I’m still adjusting to the idea that I can’t yell out my window and have someone throw a jalapeño at me.

*I didn’t include cats in this list because I always had cats in the city.

So the other day, I’m walking around the grocery store and find that organic, thin-sliced chicken cutlets are on sale. “Awesome!” I say to myself, because I am literally that much of a dork.

Now if you follow this blog at all, you might have noticed that I almost always use thighs for baking and roasting because I think they have much more flavor. But the one thing you can’t do (easily) with chicken thighs? Stuff them.

So now I’m imagining some kind of crispy, panko-crusted chicken stuffed with some sort of cheesy, creamy, spicy deliciousness. Sounds good right? I thought so too, until I got home and realized that I had completely forgotten to get jalapeños which, surprisingly enough, happen to be a rather important ingredient in jalapeño-popper stuffed chicken.

I hemmed and hawed about it for about four seconds before I decided that, yup, nothing else would do. Back to the store for three dollars worth of chiles.

I don’t regret a thing.

Carrot cupcakes are perfect for the Venn diagram of people who like carrot cake and people who like cupcakes … let’s face it, that’s basically everyone, right?

Yesterday, like two slightly terrified mole-rats unused to sunlight and open space, Matt and I ventured out onto our deck and… stood there.

“That’s, um,  great,” says a normal person, “but are you sure it’s a story worth typing up and putting on the internet?”

Yes. Yes it is.

We turned our faces towards the warm sun, each with a steaming cup of coffee clasped in our pale, trembling hands. Our huge pink eyes had grown unused to the light and we blinked, almost afraid to believe it, half convinced that the heat was a practical joke and nature was going to dump a foot of snow on us the moment we let our guard down. So we waited, nervous and twitchy, but nothing happened.

“I think it’s going to be okay,” Matt said quietly. I looked out at the brown, battered garden and noticed tiny little green shoots poking up out of the dirt. The first stems of garlic. Yes, I thought, it will be.

Yup, this winter is Ramsay Bolton and we, my friends, we are Reek. (For those of you who have no idea what I’m talking about and who clicked on that first link and think I’ve gone insane, I apologize and assure you that I have not. Pork chops marinated in a spice brine, cooked to perfection and served with garlic-sauteed broccoli rabe and an apple-onion sauce. Chops don’t get much better than this. 

One of the things I love about living in Beacon is that it really feels like a community that is growing and changing in an interesting way. For a long time I felt this way about Brooklyn (where I had lived since the early 1990’s) but as wonderful as Brooklyn is, it’s just too damn expensive now for artists and creative people to do anything but hustle every day to make rent.

I know I’m the bazillionth person to complain about how amazing Brooklyn used to be, but I was incredibly lucky to be one of the crazy, hearty few who lived in East Williamsburg back when it was practically deserted. It was a startling, magical, bizarre, occasionally terrifying place back then, and my roommates and I had absolutely no idea what it would become.

In 1995, if you would have told me that one of the hippest restaurants in NYC was going to open two blocks away from my house, I would have laughed loudly enough to startle the poodle-sized rats that lived in the burned-out minivan abandoned outside my front door. All we knew at the time was that you could rent a 3,000 square foot loft for a few hundred dollars, but you had to install your own toilet and either evict or adopt any animals you found on the premises (I love you Special Ed).

So Beacon may not be able to boast quite the same level of grittiness (thankfully), but it does have a bit of that creatively experimental spirit. Case in point, on a rough-looking corner lot, quite a ways off Main Street, has opened one of the coolest new businesses in town, Barb’s Butchery. Run by a former math professor named Barbara Fisher, it’s exactly the kind of butcher shop you dream would open up in your neighborhood. She sources as much as possible directly from local farms and so far, everything we’ve cooked from there has been fantastic.
