Get ready for a new holiday tradition: crispy-skinned Hasselback potatoes studded with soft, meltingly tender cloves of confit garlic (like roasted garlic, but even more delicious).

One of the things I’ve come to realize is that I’m a bit of a curmudgeon about, well, a lot of things really but especially about food trends. That cronut thing that happened? Easily a 6.5 on the richter scale of Emily eye rolls. And while I like kale as much as the next faux hippie, I’d very much appreciate you keeping it out of my cupcake.

That’s why no one was more surprised than me when I recently became obsessed with the most Pinterest-y of all potato dishes, the hasselback. Honestly, this is the potato of my dreams. Crispy on top but also pillowy and luscious in the middle. And while it may look like a major project, it’s actually extremely easy to do (especially with our tips listed below) and takes no longer than a regular baked potato.

Chicken with Lemon, Garlic and Basil

Chicken Lemon Garlic Basil

This chicken with lemon, garlic and basil – the flavors of an Italian summer – cooks in one pan and gets a delicious crispy skin.

Even though we are now fully immersed in September, in our neck of the woods yesterday was actually the hottest day of the year so far. The thermometer that we keep by the chicken coop was up to 99ºF (37ºC) by noon, and stayed there until way past dark. Not to sound like a whiner, but that meant that our kitchen was hotter than a three dollar pistol and it was seriously messing with my plans. See, I had been dreaming about making this chicken all summer, and I had already bought all the ingredients that I couldn’t pick from the garden so I just decided to make it anyway, inferno be damned.

This chicken is kind of a variation on one of my favorite dishes of all time, Chicken with Lime, Garlic and Cilantro. It has the same incredible combination of crispy skin and tender meat that is just so damn good. But instead of the latin influence, this version is like a summer vacation in Italy, with the flavors of lemon, garlic and fresh basil.

Sesame Roasted Pears

Sesame Roasted Pears

Roasted pears become even more delicious with a drizzle of sesame oil and sesame seeds. Perfect as a side for pork belly and rice!

It’s pear season! I love pears but I find it impossible to catch them at their perfect ripeness. They go from being hard as a rock to mush in what seems like minutes, don’t they? I also get an itchy mouth from most raw fruit (such a bummer during peach season) but pop these in the oven for 20 minutes and problem solved!

I first made these with duck breasts (using a Tyler Florence recipe) but thought it would be delicious with my newabsolutemostfavorite thing ever, Crispy Pork Belly with Soy Honey Glaze.

This recipe would also be a really great addition to a Thanksgiving table. The sesame flavor is very mellow, almost a little nutty and would complement traditional Thanksgiving flavors well. You could scatter some toasted walnuts and Bleu cheese over them … oh my god, that would be so good. (I must resist the thought of leaving work to go and make this right now.)

It’s better to use slightly under than over-ripe pears but it’s a pretty forgiving recipe.
