If you grow your own summer squash, or belong to a CSA, the weekly glut of produce can be overwhelming. Our solution? Shred it, squeeze it, mix into a cheesy batter and fritter it away. Literally. 

If you grow your own summer squash, zucchini can sometimes feel like a plot device in a horror sci-fi movie. At the beginning of the season, you carefully harvest the first zucchini, cradle it like an infant and rest it with pride on the cutting board. The next day, you have two more, and with the proud thrill of the backyard farmer, you slice and grill your summer bounty. The next day you have two more, and two more the following day. By the end of the first week of peak zucchini, you’re nervously eyeing the stack of squash that has built up on the kitchen counter, wondering how many more friends you can gift your harvest to before even they stop answering the door.

And woe betide you if you skip checking for a few days – when you return to the garden and lift up the lowest squash leaf, you’ll inevitably find one monster marrow lurking like a squat green fiend.

We make these fritters all the time in the summer, and we’ve adapted the recipe by adding fresh corn and cheese, so we’ve been meaning to re-blog this recipe ever since. Here’s the story behind these dumpling-flavored sausage rolls. We had friends over at Christmas, and while serving up a plate of pigs-in-a-blanket, my friend pointed to them and said “Hey, what do you British call those? Isn’t there a crazy, funny name you have for those?” I was momentarily nonplussed as, a) we usually DO have a crazy, funny name for things, but b) I had no idea what else we might call them, having been out of the country, and therefore the loop, for about twenty years. (“Her Majesty’s Tiniest Corgis”? “Cheeky Blinders”? Answers on a postcard, please.)

A brief research session reminded me that Brits traditionally reserve the term “pigs in blankets” for small, un-cased sausages (which we call chipolatas) wrapped in bacon, not puff pastry, and that they’re a Christmas staple. (I then asked both my siblings to confirm this and they went straight for the sausage-in-pastry option instead, which, honestly, helps NOBODY.)

But while this post is about sausages in puff pastry, we’re not making pigs in blankets. We’re making sausage rolls. And we’re making them dumpling-flavored – seasoned with ginger, garlic, scallions and chili. Buckle up!

Cucumbers are one of our favorite vegetables and we make some form of quick pickles at least once a week, if not more. I love them Asian-style, with rice vinegar and toasted sesame oil, especially along with Vietnamese-style Baked Chicken or any roasted meat.

When we decided to make Swedish Meatballs, I knew we had to also make the traditional side dish, a sweet and sour quick-pickled Swedish cucumber salad flavored with dill. We added red onions, because they add great flavor and color to the dish. If onions are not your thing, feel free to leave them out and just serve the cucumbers on their own.

As this, the strangest of years, winds toward its close, we are especially grateful to the local farms that have been going above and beyond to keep everyone fed. Restaurants, usually a major destination for farm-grown food, are going through a major upheaval, and a direct relationship between farms and the people they feed is now more important than ever.

Here in the Northeast, our farms make maximum use of every single day in the relatively short growing season, and dairy farms play a huge role in local produce. Cabot Creamery is a co-operative of 800 farm families in the New England and New York area. Now, there’s nothing wrong with them, and we still cook with that variety from time to time, but can we tell you, the first time we had really good, slow-cooked traditional polenta, it was like night and day.

Of course we, along with the rest of the world, have been stuck inside our home so we’ve been craving something warm and comforting even more than usual. When we found a bag of really good polenta, we knew exactly what we wanted to do with it — combine it with our favorite extra-sharp cheddar cheese from our friends at Cabot Creamery.

In the meantime, our summer garden has been producing some delicious harvests, and this week we’d like to talk about our beets (that’s beetroots to you in the U.K.). There’s a reason why beet and goat cheese salads have been ubiquitous on menus for as long as we’ve had menus to peruse: it’s a fantastic combination. But like any classic pairing, the devil is in the details. I adore beets, but they often need a little coaxing to bring out their best flavor. They are referred to as having an “earthy” flavor by those who love them, and “like dirt” by those who don’t. That earthiness, which is found in many root vegetables like carrots and potatoes, is produced by a compound called geosmin.

(Nerd note: geosmin is also found in one of my favorite scents, and favorite words, petrichor – the smell of the earth when it just starts to rain.) Acids break down geosmin, which is why beets are often paired with a tart vinaigrette. Tart cheeses, like chèvre, feta and some blues are a tasty foil to that sweet earthiness.

Spring is here, and one of the first areas of the garden to poke up green leaves is the stinging nettle patch. If you can avoid the sting, the nettle is one of the healthiest, most delicious perennials that’s super-easy to propagate — and is the superstar of this soup, made with leeks, potatoes, and the green, green nettle. 

There’s no getting around the fact that the stinging nettle is the unloved weed, the lurking Triffid, the snarling Caliban, if you will, of the British landscape. If you thought otherwise, let me show you the plant in its natural habitat:

But despite its rather unprepossessing appearance, its urban ubiquity, and the unpleasant electric-shock feeling of walking into one, nettles are one of the most nutritious and tasty spring greens you can cook with. Last spring we made a nettle risotto with garlic and taleggio, and this year we’re combining nettles with leeks and potatoes to create a rich, green soup, sprinkled with brown butter – garlic croutons and wild violets from the garden.

Let’s get this out of the way upfront: there’s a meat-and-fruit tradition in cooking that we’re just not a hundred percent on board with. There’s nothing intrinsically wrong with that kind of combination, but the problem occurs when the fruit is overly sweet and there’s nothing to balance it out. When you have a fatty cut of meat — such as lamb — or fish, such as the wild salmon we use here — it benefits from being cut with an acidic component. It’s the same reason we use oil and vinegar together in a salad dressing. 

We’ll often use lemon in our dishes to contribute that balance, but this week we’re looking at how pomegranate molasses, made into a pomegranate glaze, can lend a similar complexity to the rich flavor of roasted salmon.

We’ve all got that ingredient somewhere in the pantry. It’s the jar of something you picked up at the store, maybe on a whim or maybe with a specific purpose in mind, but then it got forgotten and languished in your kitchen cupboard until you re-discovered it and thought “aha! I know what to do with that”. Pantry space is not infinite (we can’t all have a TARDIS) and there’s a limit to how many items we can store that we aren’t using on a regular basis. For us, this ingredient is pomegranate molasses.

And judging by the range of “bagel-light” hybrids (flagel, crogel, and the like), we’re not alone. Bagels are big. They’re doughy. And even though they’re inevitably filled with something delicious, you still have to bite through an inch of starch to get to the stuff inside. In our opinion, the crust flavor and the filling are the selling points of a bagel. If we can get those flavors in something more delicate, let’s do it. So we turned to the airy cheese puffs known as gougères to see if they could replace our morning favorite.

Breakfast isn’t typically an ideal meal for slow food. Our modern lives pack our days with tasks demanding attention: we have kids to get to school, work deadlines to meet, errands pulling us in twenty directions. But while a cup of coffee and a quick carbohydrate filler, like a bowl of cereal or piece of toast, may get us up and out of the house quickly, they hardly constitute a satisfying and well-rounded meal. That’s why when we’re able to, dedicating a little more time to a breakfast that actually provides a whammy of flavor, as well as going some way to fulfill those balanced-food-groups and five-a-day promises, is a worthy goal.

Give grilled chicken thighs or breasts a long pre-cook marinade in Green Goddess dressing, and then char them to perfection along with sweet red onions. Then dollop more herby dressing on them for good measure and eat dinner under the stars.

Well, it was inevitable. Last week, after complaining that the summer had been so cold after a spring that was so cold and a winter that was so very cold, we finally got hit with the annual New York heatwave. And to the friends and family members who always say “OMG I love this heat! I could take it all year round!”, I literally do not know who you are and please get off me with your sweaty hug. While we were merrily cavorting around the garden a few days ago, tending to the herbs, the tomato plants and the budding zucchinis, now we’re staring sadly through the window from the air-conditioned interior. It may look pretty out there, but just half an hour in the sun and we both tend to go all Mad Max Fury Road. And nobody wants that.

So if we can’t go to the herbs, the herbs must come to us. And that’s best achieved in the form of Green Goddess dressing. If you’re not familiar with it, it’s basically a fancied up ranch, loaded up with Greek yogurt, a little mayonnaise, garlic and all the soft herbs in the garden.

Even though I grew up in New York, I’d never had a patty melt until just a few years ago. The classic version (a thin ground beef patty topped with either Swiss or cheddar cheese and grilled onions on rye bread, pan fried in butter) was said to have originated in Southern California in the restaurant chain of William “Tiny” Naylor in the 1940s or 1950s. It’s become a staple of diners, bars and dives all over the U.S.

Basically a happy, messy mashup of a grilled onion-topped burger and a grilled cheese sandwich, as soon as we made our first batch of Kimchi Pimento Cheese, we knew what we wanted to do with it.

Kimchi Pimento Cheese

Pimento cheese doesn’t have to be eaten in a sandwich – and neither does it need to contain pimento. Say what?! Before you flay us alive for our heresy, let us hurriedly explain that we replaced the pickled pepper with fermented home-made kimchi. And we, frankly, think it’s even better. 

Pimento cheese, the iconic spread of the American south, turns out not to be very southern at all – at least in terms of its origins. It’s so associated with the south that it’s hard to imagine the spread (a mix of cheddar cheese, cream cheese, mayonnaise and diced red pimentos) as coming from anywhere else, but our friends at Serious Eats did a little digging and discovered that pimento cheese actually got its start up north, in New York, as a way to market the burgeoning production of cream cheese.

In the 1870s, New York farmers started making a soft, unripened cheese, similar to Neufchâtel, that eventually evolved into cream cheese. Around the same time, Spain started exporting canned red peppers — or “pimiento” — to the United States. Eventually a combination of the cheese, peppers and mayonnaise became the spread we know today and like any good origin story, the lore soon outgrew its humble beginnings and pimento cheese became a staple of church picnics and neighborhood potlucks and fancy restaurants all over the southern U.S.

While most loved between two slices of bread, the cheese spread is versatile enough to lend itself to a variety of uses – as a dip, as a topping (think cheeseburgers, or our favorite, patty melts), and even as a stuffing for meats like chicken breasts, or pork chops.

Ramps (wild leeks) have a sweet, garlicky flavor that pairs beautifully with brown butter and caramelized oyster mushrooms. We pile this on top of toast that has been slathered with creamy ricotta cheese, making a delicious, simple appetizer.

If you have no idea what ramps are, you would be forgiven for thinking it’s some kind of disease that turns people into drooling, seasonal zombies. Because like Walkers, we (the afflicted) wander the countryside, arms outstretched, moaning “Raaaaamps. Raaaaaaaaaaamps.”

Come spring we wistfully scan shady hillsides for tell-tale green shoots. We travel great distances to far-flung farmers markets. We meet dodgy ramp dealers* in back alleys, taking our very lives in our hands, all in hope of scoring some of that delicious, garlicky goodness.

*Note: I have never actually met a dodgy ramp dealer but I bet they exist. I can just picture some bearded hippy dude standing on the corner whispering, “Pssst. Ramps. Meet me behind the compost bin in 5. Namaste.”

At night and on the weekends, when I wasn’t bartending, I was attempting to make a living as a custom hand-bound book artist. This is the long way of saying I was ridiculously flat-out broke.

My partner in book-binding, loft-living and cooking on a budget was my best friend from college, a beautiful and talented artist from Colombia named Adriana, who sadly passed away in 2004. She and I spent countless hours in her loft (a former fish-canning factory which, worryingly, always smelled a little like anchovies when it rained). We laughed at a million stupid jokes, bound hundreds of books, and watched many episodes of the X-Files. We also ate a gazillion Colombian-style arepas, slathered with butter and salt (or sharp cheese and guava paste, Adriana’s favorite).

Not to get too emo on you but looking back, I realize what a formative and precious time those years were. It taught me that I can make anything, including furniture. I learned that film editing is basically magic. And most importantly, I learned that when you cook with people, what you learn from them stays with you forever, so they’re with you forever.

Whenever I miss her I make arepas. I make arepas often.

We’ve never blogged them because they’re super dooper easy – though so much tastier and a boat-load more affordable than the frozen packaged kind. ($10 for a dozen, Costco? Really? Are we doing this now?). We simply cut good quality puff pastry into strips, wrap them around mini hot dogs, egg wash them, sprinkle them with whatever, and bake. Delicious, if somewhat pedestrian.

But this year, we wanted to up our party game, so we came up with these: Homemade Pretzel-wrapped Pigs in a Blanket with Warm Cheddar & Stout Beer Dip. Now if that’s not a home run straight through the net, then clearly I don’t know football.

These Japanese-style chicken meatball skewers, called Tsukune, are grilled to a deep golden brown and brushed with a sweet soy glaze. Great for game day snacks or just when you feel like eating something on a stick (which is every day for us). 

Well, it’s finally that time of year. You know, when we can all go outside, hang out on the deck with friends, throw stuff on the grill, enjoy the warm summer’s evening because OF COURSE NOT, IT’S JANUARY, WE JUST GOT DONE WITH -10F TEMPS, ARE YOU CRAZY. And yet this weekend my inbox included an email from our favorite national home-improvement chain inviting me to shop all their grill options. Thank you, Home Depot, I’ll wait until I can defrost the patio furniture before I start thinking about firing up the grill.

But who are we to tell you when you can and can’t eat something? If you want to make a strawberry Pavlova in November, or roast a butternut squash in March, you do that, friend, and go with our blessing. If you feel like grilling meatballs on a stick in January, whether you brave the cold to man the grill, or use a grill pan on your stovetop, or forgo the grill entirely and opt for the broiler, is there any good reason you shouldn’t? There isn’t. There’s no good reason at all.

The classic combination of spicy sausage, creamy white cannellini beans and bright escarole has never been so satisfying. We go heavy on the garlic and herbs, add more vegetables, and give it a hearty, creamy texture by mashing some of the beans and adding a little cream cheese. 

Every year on the blog about this time we complain about the weather. It’s so cold right now, we’re watching the Hardhome episode of Game of Thrones, where Jon Snow and his pals are as far North as they’ve ever been, and they’re fighting through a vicious blizzard and the cold is literally making people’s hands drop off, and we’re thinking “mmm, that looks like a toasty vacation spot”.

This year, the weather gods have outdone themselves (it’s -16ºF / -27ºC with the wind chill. That’s an incomprehensible amount of cold.). So instead of shaking our fists at the sky and risking instant frostbite, we fight back by making the coziest, heartiest, most fortifying soup we can imagine.

The croque madame is a quintessential dish in the French culinary canon. Essentially a ham and cheese sandwich, this beauty is elevated by two generous layers of creamy béchamel, broiled until bubbly and golden, and topped with a perfectly fried egg. With a little help from our friends at Le Creuset, we’ve used both their new recipe book and their bakeware to put together a perfect brunch dish.

We’ve mentioned before in the blog that there are certain kitchen items that we can’t do without. We just can’t, we’d be lost and flailing. A microplane for fine grating, a silicone spatula for mixing cake batter: these critical objects are non-negotiable. Another, of course, is a good, heavy, enameled cast iron skillet. You can pre-heat it on the stove to get it to a high temperature for quick cooking, you can transfer it to an oven or broiler for a finishing step, and if you take care of it, it will last forever. Also, if you choose well, it can be beautiful enough to be the centerpiece on your table.

We’re always keen to find new ways of using our pan, and when Le Creuset asked us to make a recipe from their new cookbook (which you can buy from their site through the link) our decision wasn’t hard: we wanted to make our favorite Parisian lunch, croque madame.

Shrimp and grits is a Southern standard which we in the Northeast are delighted to adopt. We tossed crispy shrimp with spicy, buttery buffalo sauce, and cooked up corn grits with plenty of salty, crumbly blue cheese. A match made in heaven! (Well, South Carolina and New York.)

We’ll admit it: we don’t get out of New York State very often. Our combined day jobs and blogging responsibilities have us tied down to the homestead most of the year, and, let’s face it, NY is so damned big, and we’re barely halfway up the Hudson, so it takes half a day’s drive to get anywhere that’s not here. We do jaunt across to Connecticut every couple of months to do a warehouse shop run and marvel at their exotic blue highway signs before coming straight back, but that’s about it. A couple of winters ago, we made a concerted effort to break free of our routine, and almost at random decided to drive down to Maryland. It was there that we fell in love with (a non-traditional version of) shrimp and grits.

Almost from the beginning of this blog, there have been a number of recipes that we’ve wanted to make, but have lacked the time, ingredients, or frankly, the willingness to tackle. Pork pies are one of those recipes. For any of our readers who are unfamiliar, the traditional British pork pie is a hearty, venerated and highly portable vittle served cold and protected from the elements with a robust pastry shell. Between the layer of meat and pastry is a set aspic jelly. At this point, our carnivorous Brit readership (alright, Nathan?) will be slavering and ready for the recipe. More trepidatious American sensibilities might be juggling with the concepts of “cold pork”, “robust pastry” and “aspic jelly”. Fear not, Brad, buddy, all will be explained. Oh? You’re not? Smoky and Creamy Corn Chowder with Shrimp

When the cold evenings get you thinking about a warming supper, but there’s still farm fresh corn in the market, corn chowder is our favorite way to ease into autumn. This version combines sweet corn and smoky bacon in a creamy broth, dotted with lightly poached shrimp and  sliced jalapeños to soothe the end-of-summer blues.

What happened to summer? It seems as though the season just started, and its bounty had only yesterday begun to fill the supermarket shelves. Just like that, it’s all done for another year. Fortunately, even the Northeast still has plenty of farm fresh corn to offer – a cornucopia, you might even say – and we’ll take up our supermarket’s “12 corn cobs for $4!” offer as long as we can. This aren’t the tiny, young cobs from July that we could almost eat raw – at the end of the season, while corn is still pretty tasty, but not really at its peak, it’s a fantastic ingredient in a soup or stew. I think it was probably about 12 years ago that my mom bought us our first piece of really good cookware, a 5-quart Le Creuset dutch oven. At that point, we were still using a cheap, thin-gauge pan set I had bought in college, which burned pretty much anything that got near it, even if the oven wasn’t on. Being the weirdo that I am, I even remember the first thing I made in it, Duck Leg Ragu. I remember it, not because it was particularly amazing, but because while I was cooking it, something miraculous happened … The bottom of the pan didn’t scorch before the duck had browned. There wasn’t a blackened ring of sauce in the exact same shape as the burner. It was a red-sauce miracle!  That’s when I realized that investing in a few items of really special, well-made cookware was much better than having a crappy set of pans in every size. Since then, our special collection has slowly grown, and I love each piece. We cook a lot (I know you’re shocked) and I use these skillets, fry pans, and grill pans almost daily. The great thing is, well-made cookware lasts for generations so if you have kids, tell them whoever helps in the kitchen inherits the good stuff.

When your childhood introduction to most vegetables is through their boiled varieties, you might be forgiven for seeking any alternative — anything at all! — to another plate of pallid, soggy specimens. I’m not saying rural England in the 1970s was unimaginative when it came to mealtimes, but … well, yes, that is actually what I’m saying. I am saying exactly that. Nothing was immune to the standard preparation (boiled beyond all recognition). I couldn’t again face parsnips or rutabaga (what we called “swede” which was served up in tiny cubes from a can) until well into my 30s. And then, of course, there was the poor old cauliflower. It’s such a healthy food – packed with nutrients and vitamins, but if you’re just going to boil it to death, what’s the point?

If you grow your own summer squash, or belong to a CSA, the weekly glut of produce can be overwhelming. Our solution? Shred it, squeeze it, mix into a cheesy batter and fritter it away. Literally. 

If you grow your own summer squash, zucchini can sometimes feel like a plot device in a horror sci-fi movie. At the beginning of the season, you carefully harvest the first zucchini, cradle it like an infant and rest it with pride on the cutting board. The next day, you have two more, and with the proud thrill of the backyard farmer, you slice and grill your summer bounty. The next day you have two more, and two more the following day. By the end of the first week of peak zucchini, you’re nervously eyeing the stack of squash that has built up on the kitchen counter, wondering how many more friends you can gift your harvest to before even they stop answering the door.

And woe betide you if you skip checking for a few days – when you return to the garden and lift up the lowest squash leaf, you’ll inevitably find one monster marrow lurking like a squat green fiend.

We’ve all experienced what I like to call “fusion fails”. Two culinary concepts which, taken individually, are perfectly respectable, but in combination create a whole that is … let’s just say less than the sum of its parts. For example, I love fruit, I love cheese, but bits of fruit IN cheese? No thank you. I love bacon, and I’m a fan of vodka, but bacon-flavored vodka (yes, this exists)? I’ll pass. The most successful fusions take two examples which aren’t so far separated on the food spectrum that you have to take a leap of faith that the result is even edible, let alone worth the trouble of combining them. Croissants and doughnuts can at least both be found on the bakery shelf, and thus we have the cronut. And bulgogi, the Korean staple, uses thin strips of beef that are marinated and seared, so why not apply those flavors to a perfectly grilled burger? To be honest, making up names like “cronut” and “flagel” isn’t our forte, so we’re simply calling this the “bulgogi burger”. If you’re as nerdy as we are, you might like to call this a “crossover episode” – where stars from two different shows team up to make a delicious dinner! (This is why we don’t write TV shows.)

For an almost effortless way to a more interesting cheese platter, marinate fresh goat cheese in olive oil with herbs and spices. Use it as a topping for crackers, a spread for sandwiches, or crumbled into salads.

Tangy and creamy, fresh goat cheese (also known as chèvre) is delicious right out of the package, but that doesn’t mean you shouldn’t get creative with it. Kimchi Pancakes are the kind of fast food we can really get behind. Packed with spicy kimchi and fresh shrimp, these crispy treats make a fantastic appetizer, snack or light dinner. 

We are almost never without a large jar of kimchi in our refrigerator. Even our resident Brit (who was initially, shall we say… resistant) has become addicted to the stuff. It’s not just a great condiment for traditional Korean dishes like Bulgogi, it also makes a fantastic cooked ingredient in all sorts of dishes. Its distinct tart-spicy flavor is a great addition to fried rice and stir fries, as well as in less traditional dishes, like grilled cheese sandwiches and compound butter.

You may notice that as kimchi ages, it continues to ferment. The cabbage will soften and become spicier and more tart. At some point you’ll find quite a bit of liquid from the vegetables mixed with the brine in the bottom of the jar. Don’t throw it way! In fact, do a little happy dance because you can use it to make kimchi pancakes.

It does take a little longer than the omelette method, and it requires turning on the oven. You can also cook the creamed greens ahead, and bake the eggs when you’re ready for eat.

Swedish Cucumber with Dill is fresh, light and full of sweet, tart flavor. We added quick pickled red onions to ours for color and flavor. Make it alongside Swedish meatballs, or anytime you need a quick, delicious salad.

Cucumbers are one of our favorite vegetables and we make some form of quick pickles at least once a week, if not more. I love them Asian-style, with rice vinegar and toasted sesame oil, especially along with Vietnamese-style Baked Chicken or any roasted meat.

When we decided to make Swedish Meatballs, I knew we had to also make the traditional side dish, a sweet and sour quick-pickled Swedish cucumber salad flavored with dill. We added red onions, because they add great flavor and color to the dish. If onions are not your thing, feel free to leave them out and just serve the cucumbers on their own.

We were inspired by a version of this soup from Bob’s Mountain Deli around the corner from us in Beacon. We look forward to them making this soup for our lunch orders every winter, but some days you just don’t want to leave the house. So this is our version.

I was very confused as to what a 70’s sex symbol had to do with Italian food but was too embarrassed to ask. The waiter, befuddled by my response, wandered away, I’m sure annoyed that he ended up with the table of weird Americans.

Later I noticed a special on the menu, “Farro con Pomodori Arrostiti” (Farro with roasted tomatoes). Aha! Farro, not Farrah! Farro, of course. Farro… I had no idea what Farro was. I didn’t order it.

We’re as guilty as anyone else of “lazy salad syndrome”. If we can get away with opening a box of pre-rinsed greens and throwing on a dab of supermarket dressing, we’ll do it. As a side salad, that might just about be acceptable. But if we’re making a salad as its own dish – for a quick summer meal, for example – it’s inexcusably lame. But with just a little effort and really no time at all, I can prepare this white bean salad with ingredients I already have in the pantry. Most of the ingredients for this recipe are kitchen staples, and the only things I need fresh are cucumber, tomatoes, feta, and lettuce.

As a writer, I die a little inside every time I use an exclamation mark (enough already, Internet. I get it, you’re excited). But if ever a sandwich deserved some un-ironic enthusiasm, it’s this one. It’s crispy! It’s spicy! It’s tender and juicy and slathered with basil mayo!

I know I sound completely, utterly ridiculous but I don’t care! It’s that good.

Pulled-Pork Sandwich with Pickled Onions and Radishes

Happy July 4th weekend, readers! We’re taking this week off from posting brand new articles while we organize our recipe boxes for the summer, but we thought you might appreciate this post from a couple of years ago. We make pulled-pork every year around this time, and made this way it is DAMN TASTY.

Pulled-Pork Sandwich with Pickled Onions and Radishes

I’m not going to tell you that slow-roasting a pork shoulder is the quickest path to dinner – far from it – but, for a weekend cooking project, it definitely pays off in spades.

There are actually two different cuts that get called pork shoulder: “Boston butt” and “picnic shoulder.” Either is fine for this, but do get bone-in and if possible, pasture-raised. Boston butt is easier to find but I tend to look for picnic because it’s usually sold skin-on and I like to make crackling.

True, there is a bit of planning involved here but most of the time is inactive and the end result is so worth it. It’s perfect for a relaxed kind of party (the best kind, in my opinion) where people don’t mind getting messy or sparring over bits of crunchy pork skin. Because of the way it’s cooked, pulled-pork should stay pretty juicy, so it’s great in this kind of sandwich.

I combined two recipes here, one is Momofuko-style with a sweet/tart glaze from Bon Appétit (I love the flavors but it didn’t include crackling). The other is a Jamie Oliver recipe which I used mainly as a technique to get crispy skin.

What you wind up with is a huge pile of delicious pulled-pork with a tart vinegary glaze and a sheet of crackling that you can cut up and distribute as you like (or eat by yourself when no one’s looking). This would be perfect on its own or in tacos, quesadillas, grilled-cheese sandwiches (try one with bleu cheese!).  I definitely recommend making something pickled to go along-side (we made both Quick-Pickled Red Onions and Sweet & Sour Pickled Radishes). We also made a version of this Asian Cabbage Salad, but without fennel since we didn’t have any.

We meant to take a picture of the pork coming out of the oven, but Game of Thrones Season 4 Episode 1 [2016 update: feel free to replace with GoT Season 6 / Outlander Series 2 finales as applicable] was just starting and … well, there are some things you just don’t trust your DVR with.

Of course, it’s easy to get inspiration from Italian cuisine – there are are a handful of classic pasta dishes that we fall back on for dinner parties or quick weeknight meals, and I think this might be one of our favorites – it’s cheap, easy and phenomenally delicious. We make it all the time.

This is one of those leftover Thanksgiving recipes I had been thinking about for years but just made for the first time this week. We almost always make some sort of hash with our favorite leftover stuffing and either top it with fried eggs or even bake eggs right into it but this year I wanted to try something different. Fancier, if you will.

This is now, officially, my favorite use of leftover stuffing ever. And it’s so, so simple. Add a bit of egg, form a patty, fry in a pan. Top with a poached egg.

The thing that elevates this to the stars is the unbelievably delicious chive hollandaise. If I had any idea how tasty and especially how easy it is to make this sauce, well… let me tell you that it would have been part of our Nerds brunch repertoire a long time ago.

Leftover turkey got you flummoxed? You can pretty much throw all your Thanksgiving leftovers into this delicious curry. And then invite us over to eat it.

I don’t mean to get all romance-novel on you or anything but you know that feeling you get in the pit of your stomach when you just know that something is right? Like it’s just the most perfect version of whatever it’s meant to be? That’s what it felt like the day, so many years ago now, when Matt said the words. Those perfect, beautiful words.

“Should I whip up a curry with the thanksgiving leftovers?”

Sigh.

Of course I said yes! I’m no fool.

We were still living in Astoria at the time, in an apartment that in all fairness can only be described as a “goat infested rat-hole”.  The place was grim. It was dark all the time because there was only about a foot of space between our our windows and the building next door (although when I didn’t have cable, I appreciated being able to see my neighbor’s TV from my couch. I think we watched a whole season of The Sopranos “together”).

Roasted beet salad is all about the beets, baby. But you also need spicy greens, creamy ripe cheese and a balanced salad dressing. We show you how.

We all know there are vegetables that many, many people despise. (A Brussels sprout looks around the room nervously and begins to back away. Soon to be followed by a turnip. And then a beet. The beet grabs a stick of celery from a nearby Bloody Mary as it exits.) But the thing is, I’m pretty sure that most people just think they hate these vegetables. And the aversion they experience is not because these maligned veggies are actually gross*, but because they’ve most likely had them prepared incorrectly.

*Except for celery which actually is gross and no amount of jiggery pokery will change that.

Take Brussels sprouts, for example (always at the very top of the “hated vegetable” list). Many people boil them until they are a thoroughly revolting shade of gray and the texture of a moldy sponge. They also think that a little pat of butter will camouflage the criminally sulfurous smell. Then they wonder why there is a child-shaped hole in the wall and little Timmy has run off to join the circus. BUT, take those same sprouts, coat them well in olive oil, salt and pepper and roast them in a very hot oven and they’ll come out as crisp as french fries and just as addictive. And little Timmy can stay in school and become a doctor, or a film editor or some other, equally respectable occupation.

Simple and Delicious Fried RiceI might have mentioned that we’ve had a lot of company this summer. Like, a lot. And while we both love entertaining and cooking for a crowd (seriously, we’re so, so nerdy about it), it can be quite draining. So now that summer’s over and we’re back on our own, all we seem to be craving are the simplest, easiest, quickest things we can come up with. I mean quick like a sliced tomato sprinkled with Maldon salt and topped with a basil leaf. Or a slice of bread topped with mango chutney and melted cheddar. That kind of quick.

Though for some unfathomable reason, Matt frowns on my I’m-too-tired-to-even-care dinner, which is frozen peas eaten directly out of the bag. See, it’s genius because they defrost as you chew them. Oddly enough, Matt made that same exact face when he caught me in the… act.

Anyway, for those of you who I haven’t traumatized, I’m going to tell you something shocking. Are you ready? If you have some cold, leftover rice in your fridge, you are seconds away from a delicious, healthy dinner. That’s right. Seconds. Okay, minutes, but making fried rice is still crazy quick.

And once you know the method, this homemade version will be so much better than the greasy, soggy kind that you get free with your Chinese take-out.

SCENE 1. INTERIOR. DAYIt’s brutally hot outside. Matt and Emily (plus a dog, two cats and five chickens) are sprawled all over the living room, fanning themselves.

MATT: It’ll be July 4th soon! We should make something appropriately red, white, and blue, like you Americans (sniff)… enjoy.

EMILY: First, (waving citizenship papers) that’s *we* Americans, buddy, and second, what do we have in the pantry that’s red and blue?

MATT: I WILL FIND OUT. (Matt disappears into the pantry for several hours. Cue special effect of the hands of a wall clock spinning forward. Eventually he re-appears with a can of tomatoes and a ball of blue string.)

EMILY(Long, long pause). What other colors do we have?

MATT(Chews on the ball of blue string, thoughtfully, and looks out of window at the deck, where a Triffid-like mass of herbs threatens to destroy the house.) Green. Lots and lots of green.

EMILY: THAT GIVES ME AN IDEA. (Grabs sunglasses and a large pair of scissors, heads outside.) Get ready to be…(lowers sunglasses enough to peer over them)…REFRESHED.
