Roasted Peaches with Honey and Thyme

Easy roasted peaches makes a versatile baked fruit that you can use as a side to duck or other dishes, or as a dessert.  

Roasted Peaches with Honey and ThymeThis recipe is one of those surprises that happens when you find yourself with an abundance of an ingredient (in this case, peaches) and you decide to just wing it, making something up on the spot and it turns out even better than you imagined.

It’s crazy simple but it went so well along with the Crispy Spiced Duck Legs with Thyme, that I wanted to tell you how I did it.

You could definitely roast them ahead of time and either serve them at room temperature or heat them up a bit just before you serve them. Another option would be to grill them and pour the butter/honey sauce on at the end.

These would also be excellent as a dessert (leave out the red pepper flakes but keep everything else, including the black pepper) and top with a dollop of whipped mascarpone cheese or vanilla ice cream.

Roasted Peaches with Honey and Thyme

Ingredients

  • 2 tablespoons unsalted butter melted
  • 2 tablespoons honey
  • 1 teaspoon finely grated lemon or orange zest
  • 2 teaspoons fresh thyme leaves
  • Kosher salt and fresh pepper
  • 1 pinch of red pepper flakes
  • 4 large ripe peaches, halved and pitted

Instructions

  • Preheat oven to 400 degrees.
  • In a small bowl, combine melted butter, honey, lemon zest and thyme leaves. Set aside.
  • Place peach halves, cut side down in a glass baking dish. Pour honey mixture over peaches. Sprinkle on salt, pepper and red pepper flakes, to taste. Bake in preheated oven until just soft, about 10-20 minutes. (Cooking time may vary depending on how ripe your peaches are so start checking after 10 minutes).
  • Remove from oven and cool baking dish on a wire rack. Serve peaches warm or room temperature, drizzled with the sauce from the baking dish.
