The Rhubarb 75
What’s that? You say it’s spring and you want a delicious, refreshing cocktail. Oh, and it has to be perfectly balanced, not too sweet, not too tart? So demanding!
Well, you are in luck, my nerdy friends. Let me introduce you to the Rhubarb 75.
As you may know, a classic French 75 is made with gin, simple syrup, lemon juice and champagne so all you need to do is make a Rhubarb Syrup, and you’re good to go.

Servings: 1 Cocktail
Ingredients
- 2 oz. gin recommended: Hendricks
- 1 oz. Rhubarb Syrup
- 1/2 oz. freshly squeezed lemon juice
- 1-2 oz. Prosecco or Champagne or club soda
Instructions
- Shake gin, rhubarb simple syrup and lemon juice together with ice and pour into a chilled cocktail glass. Top with splash of prosecco or champagne (about an ounce or two, to taste). Garnish with a thin slice of fresh rhubarb stalk, a strawberry or a lemon slice.
