In 2024, Matt’s Mum posted him her collection of handwritten recipes passed down by several generations of Mums, Nans and Grans. Many of these recipes have been time-tested and recreated again and again for over a hundred years. They are presented exactly as written, some using archaic ingredients or old-fashioned cooking methods. From time to time, we at Nerds with Knives Headquarters will attempt to make one of these historical recipes.

Gran’s Peppermint Creams
Ingredients
- 1 lb icing sugar
- 1 egg white
- 1/2 gill real double dairy cream
- peppermint essence
Instructions
- Sift icing sugar in basin
- Add cream and egg white and stir until you have smooth cream
- Add peppermint essence as you go, a few drops at a time
- Roll out on board dusted with icing sugar
- Stamp out into rounds with small cutter
- Leave to dry in a warm place
