Caramelized Green Beans with Soy and Lemon
This is one of the easiest side dishes that also happens to be incredibly delicious. The beans get lovely and charred, bringing out their sweetness. The lightest dressing of salty soy and tangy lemon is perfection.

- 1 1/2 lbs. fresh green beans trimmed
- 1 tablespoon neutral oil like grapeseed or canola
- 4 tablespoons soy sauce
- 2 tablespoons lemon juice about 1/2 a large lemon
- 2 teaspoons toasted sesame oil
- 1 teaspoon chili garlic sauce or sriracha optional
- 2 teaspoons toasted sesame seeds
Preheat the oven to 450F.
Place the beans on a baking sheet and drizzle with grapeseed oil. Toss to coat and then spread into a single layer. Roast until soft and gorgeously caramelized, 12-15 minutes. Toss them once or twice so they cook evenly.
While beans are roasting, in a large bowl, add soy sauce, lemon juice, sesame oil and chili garlic sauce (if using). Stir to combine.
When the beans are done, add them to the sauce and toss to coat. Sprinkle with sesame seeds and serve. These are also great at room temperature.
