Nan's Coconut Pyramids
Sweet, crunchy and chewy coconut delights, just like Nan used to make.
Prep Time 10 minutes minutes
Cook Time 30 minutes minutes
Servings 12 pyramids
- 8 oz desiccated coconut
- 5 oz caster sugar
- 2 eggs
- 5 glace cherries halved
Heat oven to 300F, Gas mark 2
Put all ingredients in bowl and mix thoroughly
Divide into 10 portions, form into pyramids with fork and fingers
Place on greased baking sheet
Bake 30-35 minutes till golden on top
Add cherry portion to top
