Serves: 1 Cocktail
The Rhubarb 75
  • 2 oz. gin (recommended: Hendricks)
  • 1 oz. Rhubarb Syrup
  • ½ oz. freshly squeezed lemon juice
  • 1-2 oz. Prosecco or Champagne (or club soda)
  1. Shake gin, rhubarb simple syrup and lemon juice together with ice and pour into a chilled cocktail glass. Top with splash of prosecco or champagne (about an ounce or two, to taste). Garnish with a thin slice of fresh rhubarb stalk, a strawberry or a lemon slice.
